What are some good ideas for picnic food?

Fruit/fruit salad, Salads all types (potato, pasta, lettuce), hummus w/ pita or carrots, sandwiches, fried chicken wings, tabullah (not sure how you spell it), chips, cookies, or pound cake.

sandwiches (make 'em fancy with croissants or some other kind of yummy bread)

something salty (potato salad, chips or pretzels)

something sweet (cookies, lemon bars, brownies)

a bottle of water

some other drink

a piece of fruit

**Make individual bags for your picnic. If you go to the dollar store you can get pretty gift bags or those Chinese take out containers and pack everyone an individual bag. Be sure to include plastic silverware, napkins and straws. It will only take a few extra minutes of your time to make it extra special.

Amish Potato Salad Recipe

6 medium Potatoes
1 small Onion, chopped fine
1 cup Celery, chopped
1 teaspoon Celery seed
1 teaspoon Salt
4 Hard-cooked eggs, diced

Dressing
2 Eggs, well beaten
3/4 cup Sugar
1 teaspoon Cornstarch
Salt to taste
1/4 cup vinegar
1/2 cup Cream or evaporated milk
1 teaspoon Mustard
3 tablespoons Butter, softened
1 cup Mayonnaise

Directions:

Cook the potatoes in their jackets until soft. Peel and dice. Mix potatoes gently with the remaining 5 salad ingredients; then add the dressing.

To prepare the dressing, mix eggs with sugar, cornstarch and salt. Add vinegar, cream, and mustard. Cook until thickened. Remove from heat and beat in butter. Add potato mixture to the cooled dressing, folding gently together.

Amish Picnic Sausage

This is a picnic sausage, similar in taste to salami. Nylon netting is available in any fabric store.

Original recipe yield:

INGREDIENTS
3 pounds ground beef
1 pound ground spicy pork sausage
1/4 cup curing salt
2 teaspoons liquid smoke flavoring
1 1/2 teaspoons garlic powder
2 teaspoons whole peppercorns
1 teaspoon paprika
1 pinch dried sage
2 tablespoons dried minced onion
4 (12x18 inch) pieces of nylon netting
DIRECTIONS
In a large bowl, mix together the ground beef, pork sausage, curing salt, liquid smoke, garlic powder, peppercorns, paprika, sage, and onion flakes until well blended. Cover, and refrigerate for 24 hours.
Preheat the oven to 225 degrees F (110 degrees C).
Divide the meat mixture into 4 equal pieces, and form each piece into an 8 inch long log. Place each log onto a piece of netting, and roll tightly. Twist the ends and tie with string, or fold under. Place sausage rolls on a broiling pan with a rack.
Bake for 5 1/2 to 6 hours in the preheated oven. The internal temperature of the sausage should be 160 degrees F (70 degrees C). Remove and cool. Remove nylon net, and wrap sausage in foil. Refrigerate overnight before slicing. Store in the refrigerator for up to 2 weeks, or freeze for up to 2 months.

Fruit like apple and grapes are good but since both these fruit is sweet, you might want to bring something to wipe your hand. Sandwich is easy to prepare and clean... chips is good too but need to bring drink and sauce for that... Have fun...

I bring this to a local outdoor Jazz night every week during the summer - no fuss, finger food, and everyone is happy

cold sandwichs. make them once you get there. anything individually packaged for drinks. fried chicken or anything you can get at the deli in a grocery store
