Here are a few ideas:
I'm not familiar with tuna patties, but I sometimes make salmon patties with some crushed saltine crackers, egg whites, and salt and pepper. Saltines of course are not carb-free, but have a lot less calories than mashed potatoes, and so would be more weight-loss-friendly.
Cooked, pureed cauliflower mashed with skim milk, low-fat cheddar cheese, and a bit of salt is a surprisingly good alternative to mashed potatoes and have a lot less carbs and calories.
Instead of bread for sandwiches, I use light, whole wheat English muffins. They have only 100 calories and 8 grams of fiber - compare that to 2 slices of bread!
Overall, I suggest eating less carbs by eating lots of lean protein (chicken breast, tuna, salmon, lean ground turkey, beans, low-fat cheese, low-fat yogurt) and vegetables. Some carbs are necessary for a balanced diet, but it's best to eat those that are low in sugar and processed grains, and high in whole grains and fiber. To maintain my weight, I find it important to count calories (rather than carbs), making sure I burn more than I consume. Of course, exercising is equally important in maintaining this balance.

Don't cut carbs - that's a novice mistake. Carbs are essential & have never harmed anyone.
Swap white bread for whole grain
Swap white rice for brown rice
Swap white pasta for wholemeal pasta
Eat any type of potato cooked any way - they are a super food.
Don't count calories, that's obsessive and pointless.
Just be active.
If your going to cut something, don't cut a crucial food group. Cut Sugar.

If you want to have a sandwich (with the exception of peanut butter and jelly) try this. Take a lettuce leaf (the larger the better), place your sandwich filler in it and roll it up. Tastes great!
