Cauliflower does work wonderful for faux mashed potatoes! For pasta, I use dreamfields which is specifically made for lowcarb eating. It is the ONLY brand that I can not tell the difference between low carb and normal. I choose wild rice or brown rice when we have it. We don't really have a substitute for bread although we do use low carb tortillas at times. Go to http://www.lowcarb.ca/ and take a look at the support forum. There are tons of good ideas and recipes too for lowering your carbs. You just have to be a bit more creative but low carb DOES work!

I'm not on a low-carb diet (I run - it wouldn't be healthy), but I do watch my fiber intake like a hawk. Those 4 things you listed are the ones I have to be the most careful about:

Potatoes: Still have them once in a while, but measure out the portion size, and I don't add more than 1 pat of butter to them (no heavy cream, no cheese). I top them with other vegetables instead (salsa, chives, green onions, etc).

Bread: High fiber, low calorie. There are a couple varieties of bread that have 70-80 calories for 5-6 grams of fiber for BOTH slices, not 220 for one. Don't just switch this out for a wrap or tortilla - these can have just as many, if not more, calories. Cut it out completely... lettuce leaf works too.

Pasta: High fiber, whole grain, whole wheat pasta. 190 calories for a serving, 5g of fiber. Add an equal amount of sauteed vegetables, and you won't even notice that you are only eating 2oz.

Rice: Medium to long grain brown rice... or, I buy pilafs with a number of whole grains in it. About 200 calories per serving with 6 to 8g of fiber. I buy mine in the organic/health food store. Bunch of different names, but it will have some pearled barley, flax, and a bunch of other seeds in it. Also high in Omega-3s.

Good luck!

Potato = steamed, mashed cauliflower

Bread = 100% stone ground whole wheat bread

Pasta = Spinach flavored whole wheat pasta

Rice = Whole grain brown rice.

When you are making tuna patties, you can mash the steamed cauliflower to use instead of the mashed potatoes, but you must add a little scrambled egg to the mix to make sure that the patties hold together. Yum!

Here are a few ideas: I'm not familiar with tuna patties, but I sometimes make salmon patties with some crushed saltine crackers, egg whites, and salt and pepper. Saltines of course are not carb-free, but have a lot less calories than mashed potatoes, and so would be more weight-loss-friendly. Cooked, pureed cauliflower mashed with skim milk, low-fat cheddar cheese, and a bit of salt is a surprisingly good alternative to mashed potatoes and have a lot less carbs and calories. Instead of bread for sandwiches, I use light, whole wheat English muffins. They have only 100 calories and 8 grams of fiber - compare that to 2 slices of bread! Overall, I suggest eating less carbs by eating lots of lean protein (chicken breast, tuna, salmon, lean ground turkey, beans, low-fat cheese, low-fat yogurt) and vegetables. Some carbs are necessary for a balanced diet, but it's best to eat those that are low in sugar and processed grains, and high in whole grains and fiber. To maintain my weight, I find it important to count calories (rather than carbs), making sure I burn more than I consume. Of course, exercising is equally important in maintaining this balance. Hope my suggestions are helpful!

mashed celery root or cauliflower is supposed to be a good substitute for potatoes but I don't know how that would work in patties.
