Romesco sauce can be used in many ways. Topping fish/chicken/beef, you would want the sauce to be as warm as your entree. I f using as a dip, room temp. will enhance the flavors or slightly chilled.

Room temp, or somewhat warmer. Not ultra hot, though. Depends on your application and preference. I'd keep it "warm", like spaghetti sauce.
