Biscuits au citron! (lemon shortbread cookies)
1 cup butter, softened
3/4 cup light brown sugar, packed
2 teaspoons fresh lemon juice or lemon extract
lemons, zest of
2 cups sifted flour
Preheat oven to 325 degrees.
In a large bowl, cream butter and sugar with electric mixer.
Scrape sides of the bowl.
Add lemon juice, zest and flour and mix thoroughly on low speed.
Shape level tablespoons of dough into logs on ungreased cookie sheet.
Bake 15-20 minutes until cookie spreads and is very light brown in color.
Cookies may be dipped in soft lemon frosting or melted chocolate on one end.
Chill to set chocolate or frosting.
A simple but lovley authentic french meringue recipe!
4 egg whites
2 1/4 cups confectioners' sugar
DIRECTIONS
Preheat the oven to 200 degrees F (95 degrees C). Butter and flour a baking sheet.
In a glass or metal bowl, whip egg whites until foamy using an electric mixer. Sprinkle in sugar a little at a time, while continuing to whip at medium speed. When the mixture becomes stiff and shiny like satin, stop mixing, and transfer the mixture to a large pastry bag. Pipe the meringue out onto the prepared baking sheet using a large round tip or star tip.
Place the meringues in the oven and place a wooden spoon handle in the door to keep it from closing all the way. Bake for 3 hours, or until the meringues are dry, and can easily be removed from the pan. Allow cookies to cool completely before storing in an airtight container at room temperature.
And these eclairs are to die for...turn out like you got them from a little french bakery!

1 teaspoon vanilla extract
3 tablespoons hot water
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C). Grease a cookie sheet.
In a medium saucepan, combine 1/2 cup butter and 1 cup water. Bring to a boil, stirring until butter melts completely. Reduce heat to low, and add flour and salt. Stir vigorously until mixture leaves the sides of the pan and begins to form a stiff ball. Remove from heat. Add eggs, one at a time, beating well to incorporate completely after each addition. With a spoon or a pastry bag fitted with a No. 10, or larger, tip, spoon or pipe dough onto cookie sheet in 1 1/2 x 4 inch strips.
Bake 15 minutes in the preheated oven, then reduce heat to 325 degrees F (165 degrees C) and bake 20 minutes more, until hollow sounding when lightly tapped on the bottom. Cool completely on a wire rack.
For the filling, combine pudding mix and milk in medium bowl according to package directions. In a separate bowl, beat the cream with an electric mixer until soft peaks form. Beat in 1/4 cup confectioners' sugar and 1 teaspoon vanilla. Fold whipped cream into pudding. Cut tops off of cooled pastry shells with a sharp knife. Fill shells with pudding mixture and replace tops.
For the icing, melt the chocolate and 2 tablespoons butter in a medium saucepan over low heat. Stir in 1 cup confectioners' sugar and 1 teaspoon vanilla. Stir in hot water, one tablespoon at a time, until icing is smooth and has reached desired consistency. Remove from heat, cool slightly, and drizzle over filled eclairs. Refrigerate until serving.

Fig and Olive Tapenade
INGREDIENTS
1 cup chopped dried figs
1/2 cup water
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
2/3 cup chopped kalamata olives
2 cloves garlic, minced
salt and pepper to taste
1/3 cup chopped toasted walnuts
1 (8 ounce) package cream cheese
DIRECTIONS
Combine figs and water in a saucepan over medium heat. Bring to a boil, and cook until tender, and liquid has reduced. Remove from heat, and stir in the olive oil, balsamic vinegar, rosemary, thyme, and cayenne. Add olives and garlic, and mix well. Season with salt and pepper to taste. Cover, and refrigerate for 4 hours or overnight to allow flavors to blend.
Unwrap cream cheese block, and place on a serving platter. Spoon tapenade over cheese, and sprinkle with walnuts. Serve with slices of French bread or crackers.

1 cup water
3/4 stick butter (6 tablespoons)
1 tablespoon sugar plus 1/8 teaspoon salt (for sweet)
1 teaspoon salt (for savory)
5 3/4 ounces flour
1 cup eggs, about 4 large eggs and 2 whites
Preheat oven to 425 degrees F.
Boil water, butter, and salt or sugar. Add flour and remove from heat. Work mixture together and return to heat. Continue working the mixture until all flour is incorporated and dough forms a ball. Transfer mixture into bowl of a standing mixer and let cool for 3 or 4 minutes. With mixer on stir or lowest speed add eggs, 1 at a time, making sure the first egg is completely incorporated before continuing. Once all eggs have been added and the mixture is smooth put dough into piping bag fitted with a round tip. Pipe immediately into golfball-size shapes, 2 inches apart onto parchment lined sheet pans. Cook for 10 minutes, then turn the oven down to 350 degrees F and bake for 10 more minutes or until golden brown. Once they are removed from the oven pierce with a paring knife immediately to release steam.

PARMESAN APPETIZERS
2/3 c. Parmesan cheese
1 c. mayonnaise
Garlic salt
1 bunch diced green onions
1 pkg. mini rye bread rounds or sliced French rolls
Combine Parmesan cheese, mayonnaise, green onions and garlic salt to taste. Spread on sliced bread. Broil until brown. Serve immediately.
APPETIZER PINATA MEATBALLS
1 lb. ground beef
1/4 c. chopped raisins
1/3 c. dry bread crumbs
1/4 c. milk
1 egg
1/4 tsp. salt
1/4 tsp. onion salt
1/8 tsp. pepper
36 small pimento-stuffed olives
1/2 c. or more Catalina French dressing
Combine meat, raisins, bread crumbs, milk, egg and seasonings. Mix lightly. Shape meat mixture around olives into balls. Brown meatballs in dressing over low heat. Cover and continue to cook over low heat 10 minutes, turning meatballs occasionally. Makes 3 dozen appetizers.
FRENCH APPLE DESSERT
4 c. diced, peeled apples
2 eggs
2 c. sugar
2 tsp. cinnamon
1/2 c. salad oil
1/2 c. chopped nuts
2 c. flour
2 tsp. soda
1 tsp. salt
Place apples in mixing bowl. Break eggs over apples and stir well. Mix sugar and cinnamon. Add to apples with salad oil and nuts. Mix. Add flour, soda, and salt. Mix together well and put into a greased and floured 9 x 13 inch cake pan. Bake in moderate oven (350 degrees) for 45 minutes. Cut into squares and serve with the following caramel sauce: 1 c. white sugar 1 c. heavy cream 1/2 c. butter 2 tbsp. flour 2 tsp. vanilla
Bring above ingredients to boil; stir constantly until mixture thickens. Serve hot over squares. Put Cool Whip on top if you like.
FRENCH BERRY CREME DESSERT
2 sticks butter
1 c. chopped walnuts
1 c. flour
1 c. graham cracker crumbs
1 lg. Cool Whip
1 c. powdered sugar
1 tsp. vanilla
1 (8 oz.) pkg. cream cheese
1 (16 oz.) can pie filling
CRUST: Melt butter. Mix with walnuts, flour and graham cracker crumbs. Pat evenly on bottom of 9x13 inch pan. Bake at 400 degrees for 15 minutes. Cool.
FILLING: Blend powdered sugar with Cool Whip, vanilla and soft cream cheese. Pour over cooled crust. Put pie filling on top. I usually use blueberry filling, but any may be used.

Desert Crepes
INGREDIENTS
4 eggs, lightly beaten
1 1/3 cups milk
2 tablespoons butter, melted
1 cup all-purpose flour
2 tablespoons white sugar
1/2 teaspoon salt
DIRECTIONS
In large bowl, whisk together eggs, milk, melted butter, flour sugar and salt until smooth.
Heat a medium-sized skillet or crepe pan over medium heat. Grease pan with a small amount of butter or oil applied with a brush or paper towel. Using a serving spoon or small ladle, spoon about 3 tablespoons crepe batter into hot pan, tilting the pan so that bottom surface is evenly coated. Cook over medium heat, 1 to 2 minutes on a side, or until golden brown. Serve immediately.

Sinful Creme Brulee
INGREDIENTS
1/2 cup semi-sweet chocolate chips
2 cups heavy cream
1/4 cup white sugar
1 pinch salt
2 teaspoons vanilla extract
5 egg yolks
4 tablespoons white sugar
DIRECTIONS
Preheat the oven to 300 degrees F (150 degrees C).
Place about 2 tablespoons of the chocolate chips into each of four 6 ounce ramekins. Place them in the microwave, and heat on full power for 30 second intervals. Stir, and continue heating until chocolate has melted. Spread to cover the sides and bottom of each ramekin.
Bring a large pot of water to a boil.
Meanwhile, in a saucepan, whisk together the cream, 1/4 cup sugar, and salt. Set over medium heat, and warm until steam rises from the surface. Then in a separate bowl, whisk together the egg yolks and vanilla. When the cream is hot, ladle a little bit into the egg yolks while whisking quickly. Ladle in a bit more to bring the yolks up to a high temperature without scrambling them. Whisk the yolk mixture into the rest of the cream. Ladle into the chocolate lined ramekins.
Place a towel in the bottom of a baking dish, and place the filled ramekins on top of the towel. Place in the oven, and pour boiling water carefully into the baking dish until it comes half way up the sides of the ramekins. Cover the dish loosely with aluminum foil.
Bake for 35 to 40 minutes in the preheated oven, just until the custard is set. Remove ramekins from the dish, and refrigerate for 4 to 6 hours.
Before serving, sprinkle 1 tablespoon of sugar over the top of each creme brulee. Use a kitchen torch or your oven's broiler to caramelize the sugar. It may take 2 to 3 minutes in the broiler. Serve immediately.
Chocolate Madeleines
INGREDIENTS
1/4 cup sifted all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1 pinch salt
2 ounces butter
1/2 teaspoon vanilla extract
1/4 cup white sugar
1 egg
2 egg yolks
1/3 cup confectioners' sugar for decoration
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Butter one Madeleine pan.
Sift the flour, cocoa, baking powder and salt together. Set aside.
Cream the butter with the vanilla and the sugar. Add the egg and egg yolks, beating to mix. Stir in the dry ingredients until just combined only, do not over mix. Place rounded teaspoon of batter into the prepared Madeleine shell forms.
Bake at 375 degrees F (190 degrees C) for 12 minutes. Remove from oven and immediately invert onto a wire rack to cool. Once cool sprinkle with confectioners' sugar, if desired.
Plum Clafouti
INGREDIENTS
6 tablespoons white sugar, divided
14 Italian prune plums, halved and pitted
3 eggs
1 1/3 cups milk
2/3 cup all-purpose flour
1 1/2 teaspoons grated lemon zest
2 teaspoons vanilla
1 pinch salt
1/2 teaspoon ground cinnamon
2 tablespoons confectioners' sugar
DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Butter a 10 inch pie plate, and sprinkle 1 tablespoon of sugar over the bottom.
Arrange the plum halves, cut side down, so that they cover the entire bottom of the pie plate. Sprinkle 2 tablespoons of sugar over the top of the plums. In a blender, combine the remaining 3 tablespoons of sugar, eggs, milk, flour, lemon zest, cinnamon, vanilla, and salt. Process until smooth, about 2 minutes. Pour over the fruit in the pan.
Bake for 50 to 60 minutes in the preheated oven, or until firm and lightly browned. Let stand 5 minutes before slicing. Dust with confectioners' sugar before serving.
Pudding Cake
INGREDIENTS
1 cup all-purpose flour
1/3 cup white sugar
1 teaspoon baking powder
1/2 cup raisins
1/2 cup milk
1 cup packed brown sugar
2 cups boiling water
1 tablespoon butter
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Butter one 2 quart casserole dish.
Sift the flour, white sugar and baking powder together. Add the raisins and stir in the milk. Spoon batter into the prepared dish.
Combine the brown sugar, boiling water, butter and vanilla. Gently pour over the batter. Do not stir.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve warm.
French Cookies
INGREDIENTS
2 pounds dark brown sugar
1 pound butter
7 eggs
1 tablespoon vanilla extract
6 1/2 cups all-purpose flour
DIRECTIONS
In a large bowl, stir together the brown sugar and butter until smooth and creamy; then add eggs and vanilla, and beat well. Gradually stir in flour. Set bowl over a hot water bath, and stir to blend ingredients. Cover, and refrigerate overnight.
Preheat the galette iron.
Shape dough into 1 inch balls, and place in the galette iron. Close the iron, and cook the cookies. This should take about 30 seconds in an electric galette iron, or 2 to 4 minutes in a handheld iron over a medium flame. Carefully remove cookies and cool on wire racks.
Mille Fillies
INGREDIENTS
2 cups milk
7 1/2 tablespoons all-purpose flour
1 whole vanilla bean
3/4 cup castor sugar or superfine sugar
1 pinch salt
6 egg yolks
1 1/2 (17.5 ounce) packages frozen puff pastry
1/2 cup apricot preserves (optional)
confectioners' sugar for dusting
DIRECTIONS
In a small saucepan, heat milk until small bubbles form. Drop in the vanilla pod, remove saucepan from heat, and set aside to cool until just warm. In a medium saucepan, stir together the flour, sugar, salt, and egg yolks. Beat for a moment, then gradually whisk in warm milk. Simmer over medium-low heat until the custard thickens, stirring constantly with a wooden spoon to prevent sticking. Transfer custard to a bowl, and allow to cool, stirring from time to time.
Preheat oven to 400 degrees F (200 degrees C). Roll out the puff pastry into a single sheet about 1/2 inch thick; it should be the same size as a 17x14 inch baking sheet. Place the pastry onto the baking sheet, and ***** all over with a fork.
Bake in preheated oven for 28 minutes. Remove from oven, and cool pastry on the baking sheet.
When the pastry has cooled completely, transfer it from the baking sheet to a hard surface, and cut lengthwise into three 4 to 5 inches wide strips. Spread one strip thickly with custard. Place a second strip directly over the first; spread the top evenly with jam. Cover with the third strip, and dust with confectioners' sugar. With a very sharp knife, cut into 8 rectangular portions.
