My favorite way is what my family calls "Italian Potatoes"
Ingredients:
Potatoes (about medium sized, however many you want to cook)
Italian dressing
Salt and pepper
Aluminum foil
Peel the potatoes then one by one cut them up into slices (you want circle shaped slices so start at the narrow end) Place one sliced potato, try to maintain the potato shape, on a piece of foil big enough to wrap the potato in. Pour on a tablespoon or 2 of it Italian dressing and salt and pepper to taste. Wrap the foil around the potato and twist the ends shut, think like a hard candy is wrapped. Place the wrapped potatoes on the grill (on the second rack if you have that option) and cook for about 45 minutes to an hour. Unwrap and enjoy!

Baked Potatoes:
Rub olive oil and sea salt on the outside of the potatoes and then bake at 350 degrees F until tender.
Garlic and Cheese Mashed Potatoes:
Make mashed potatoes as you normally would, but add in a bit of fresh garlic (to taste) and some parmesean cheese.
Parsley Potatoes:
Cut up small red potatoes and boil on stove until tender. Drain. Add 1/2 stick of butter or margarine, a pinch of garlic salt (to taste) and parsley. Stir.
Potatoes and Onions:
Slice Yukon gold potatoes and onions and lay in a large baking dish. Toss with olive oil and salt and fresh garlic. Cover with aluminum foil and bake for 2 hours at 250 degrees F. Uncover for 20 minutes and increase temperature to 350 to crisp.
These are some of my family's favorite ways of eating potatoes. Hope you enjoy them as well!

Potatoes are a mainstay of my diet!!! Here are some of my favorite recipes:
Baked Potato Casserole:
6 Yukon Gold Potatos, peeled and cut into equal pieces
1 container Organic Chicken Broth
Kosher Salt
1 bunch green onion
1 container sour cream
1 8 oz pkg cream cheese
1 pkg. shredded cheddar cheese
5 slices bacon, fried, drained, and crumbled
Cook potatoes in chicken broth until fork tender. Drain and set aside to cool. Chop green onions and mix with sour cream and softened cream cheese. Add bacon. Salt and pepper to taste. Combine with potatoes and put in a casserole dish. Top with cheddar cheese and cover. Bake at 350 degrees for 45 - 50 minutes or until done.
Roasted Potatoes:
4 -6 Yukon Gold Potatoes, cut into bite sized pieces
1/4 cup good olive oil
1 T Kosher Salt
1 Tsp Fresh Ground Pepper
2 Sprigs Rosemary, stemmed
Toss potatoes in olive oil and sprinkle with salt and pepper. Toss and add rosemary. Put in 350 degree oven and bake. Turn at 30 minute intervals until potatoes are crispy, but tender on the inside.
Creamy Mashed Potatoes:
4 Yukon Gold potatoes
1 carton Chicken Broth
1 cup sour cream
1 3 oz container cream cheese
1/2 cube butter
1/2 tsp garlic powder
Cook potatoes in chicken broth and drain. Add sour cream, cream cheese, butter and garlic powder. Mash with potato masher and add salt and pepper to taste. If potatos are too thick, add milk or sour cream to the mixture to thin. Yummy!
Salt and fresh ground pepper to taste

I like using left-over mashed potatoes to make potato pancakes in the morning w/ eggs & bacon (just make a patty and fry in a little bit of butter).
I also like them cut up in big chunks, seasoned and baked as a side dish with dinner. Simple and good.

4 potatoes
10 cloves garlic, unpeeled
1/4 tablespoon oil
1. Boil whole or quartered potatoes for 5 minutes.
2. Roast potatoes, smeared with oil, in pan with whole garlic cloves at 400F for 45 minutes.

a good recipe for russet potatoes that i have is as follows.
for 3-4 people
3-5 russet potatoes
1 small bell pepper(green)
1/2 small yellow onion
2 teaspoons creole seasoning
1/2 teaspoon salt
about 1/2 - 1 cup of oil
1 cup shredded cheese
1/2 cup bacon bits
add oil to a large skillet and let it begin to heat over mes heat. dice the pepper and onion into small cubes and add to pan. dice potatoes and add them to pan with peppers and onion. mix up well and add your seasonings. cover and let cook for about 15-20 minutes or until tender. when they are fully cooked flaten them out with the back of a spoon and sprinkle over bacon bits and top off with cheese.
this is a big hit in my house.. is great with breakfast or any meal.

It all depends on how and what you want the potatoes to taste. frying them will make them golden and crispy, you can add sesonings to taste. you could also add veggies etc..
You can bake them along with a roast and veggies.
You can peel the potatoes and boil them, when done mashs them up, add 1 cup milk, 2 tablespoons butter and to add some taste you could add some shreded cheese. it's really good.

1) Mashed - go beyond milk and butter though.
-use a flavored cream cheese (I like herb and garlic)
-a mix of sour cream, cheddar cheese and green onions
-mashed roasted garlic, butter and cream
2)Baked - don't just stick with plain baked
-wrap in foil with butter, salt, pepper and a sliver of onion and bake
-wrap in peppered bacon and bake
-bake as usual, scoop out flesh, mash with bacon, cheese and milk, restuff and bake for an additional 10 minutes
3)Roasted - oh the options that you have, leave the skin on for extra flavor and nutrients
-Greek - toss cut potatoes in salt, pepper, lemon juice and oregano, bake on a cookie sheet
-Italian - use italian dressing to season potatoes, bake
-use any marinade or dressing you like to season th potatoes
-use any dry seasoning (Kernels popcorn seasonings is great)
4)Potato Latkes
5) French fries - use sweet potato fries for extra flavor
-brush with beaten egg white and your fave seasoning for crispy, baked fries
I hope this gives you a few new ideas! My fave is mashed with cream cheese!
