We're putting new sheetrock on our ceilings, we've been screwing the screws into the ceiling beams w no problem... but there seem to be no beams along the edges where the ceiling & walls meet.

Example: on one wall / ceiling corner the first beam is 13 inches away from the edge where ceiling meets wall.

What do we do, and how do we fasten the edges of the sheetrock so they won't droop???

You shouldn't be mounting the sheetrock directly onto the beams. There should be 1x3 strapping applied perpendicular to the beams for you to mount the sheetrock to. In this way you would have something to fasten to next to the wall.
Obviously you need to add something to screw into. Can you put a few pieces of 2x4 perpendicular from the last beam towards the wall?

the place you are working has to have a beam at the wall top. place a 2X4 along that beam and it should give you the distance you need to get a screw or nail into the edges of the sheetrock. If you can not get that to work then do what we call toe-in. Place cut 2X4's between the wall and the first joint (beam) in 16 inch increments. you will have to cut the 2X4 the length to fit between the first joist and the wall but it works too.

Doug, you say , "there seems to be". From that, I gather you are putting Sheetrock OVER existing plaster or Sheetrock and can't see over it.. So, in that case, if you are not going to do the walls too, just run a heavy bead of construction adhesive, (Liquid nails), around the perimeter as you go.

If you are going to do the walls too, use that Sheetrock to hold up the ceiling Sheetrock edges.
