Boil your potatoes with the skin on until done. Peel, chop. When they are cool add chopped onions and celery and 1/4 cup of Italian dressing. Let sit in the fridge over night. The next day add mayo, a little of mustard and relish. If you like it with a kick, you can also add a little chopped jalapeno.

cook red or yukon gold potatoes until done but still a little firm....cut into about 1 inch cubes.....I use about 5 pounds of potatoes with a half dozen hard boiled eggs....the eggs should be cooled....then the yolks crumbled onto the potatoes and chop up the whites and add those....then add salt, pepper, celery salt and about a 1/2 tsp of celery seed.....then I dice one good size onion and about 4-5 stalks of celery and add those.....the dressing is about a cup of mayo with 2 tablespoons of dijon mustard...mix all together and adjust seasoning as needed....I then lightly sprinkle the top with paprika and toss around some sliced fresh radishes....enjoy
