OLD FASHIONED MAC 'N CHEESE

1 1/2 c. elbow macaroni
4 tbsp. butter, divided
1/4 c. all purpose flour
3 c. milk
1 tsp. dry mustard
3/4 tsp. salt
1/4 tsp. freshly ground pepper
1 1/2 c. shredded sharp cheddar cheese
1/4 c. freshly grated Parmesan cheese
1/3 c. plain dry bread crumbs

Preheat oven to 375 degrees. Cook macaroni in boiling salted water in large saucepan just until tender, about 8 minutes. Drain and rinse under cold water.
Meanwhile, melt 2 tablespoons butter in large saucepan over medium heat. Stir in flour and cook, stirring 1 minute. Gradually whisk in milk, mustard, salt and peppers. Bring to boil, whisking. Boil 1 minute. Remove from heat and whip in cheeses until melted and smooth. Stir in drained macaroni. Pour into shallow 2 quart baking dish. Melt remaining 2 tablespoons butter, stir in bread crumbs and sprinkle over macaroni. Bake 30 minutes. Let stand 10 minutes.

Makes 8 servings.

Baked Tofu , green salad, rolls and cranberries

Tofu cubes are marinated and then baked in the oven. The tofu can be used as a hot or cold snack or used as salad topping. Don't forget the smoke flavoring, it really adds the special flavor."

1 (16 ounce) package extra firm tofu
1/4 cup soy sauce
2 tablespoons maple syrup
2 tablespoons ketchup
1 tablespoon vinegar
1 dash hot sauce
1 tablespoon sesame seeds
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 teaspoon liquid smoke flavoring
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly spray a non-stick baking sheet with oil.
Slice tofu into 1/2-inch slices, and gently press excess water out of tofu. Cut sliced tofu into 1/2-inch cubes.
In a bowl, stir together the soy sauce, maple syrup, ketchup, vinegar, and hot sauce. Stir in sesame seeds, garlic powder, black pepper, and liquid smoke. Gently stir tofu cubes into sauce. Cover, and marinate at least 5 minutes.
Place the tofu on the baking sheet in a single layer. Bake in a preheated oven for 15 minutes. Turn tofu, and bake until the tofu turns golden brown, about 15 minutes more.

I'm a kid myself. When i was their age, no soup with vegetables in it. Spaghetti is a big hit, bread with butter, and alphabet soup was my favorite. Make sure they have milk with dinner to grow up strong, and they bring their dishes to the sink. When all else fails and the kids won't eat anything, listen do Dr. Phil - The kids won't let themselves starve, they'll get hungry enough to eat. Oh yeah, for an easy dinner for your family, scambled eggs, egg whites, and omelets will not get any complaints.

My daughter (5) loves these

MINI MEAT LOAVES

½ cup Ketchup
2 Tbsp. Packed brown sugar
1 lb. Lean ground beef
½ lb. Ground pork
½ cup original Bisquick mix
¼ tsp. Black pepper
1 small onion, finely chopped (1/4 cup)
1 egg

Heat oven to 450°. In a small bowl, stir Ketchup and brown sugar until mixed; reserve ¼ cup for topping. In large bowl, stir remaining ingredients and remaining Ketchup mixture until well mixed.

Spray 13X9-inch pan with cooking spray. Place meat mixture into pan; pat into a 12X14-inch rectangle. Cut lengthwise down the center and crosswise into sixths to form 12 loaves. Separate loaves using spatula, so no edges are touching. Brush loaves with reserved ¼ cup Ketchup mixture.

Bake 18-20 minutes or until loaves are no longer pink in the middle and meat thermometer in center of loaves reads 160°

BURRITO PIE

2 pounds ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (2 ounce) can black olives, sliced
1 (4 ounce) can diced green chili peppers
1 (10 ounce) can diced tomatoes with green Chile Peppers
1 (16 ounce) jar taco sauce
2 (16 ounce) cans refried Beans
12 (8 inch) flour tortillas
9 ounces shredded Colby cheese

Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium heat, sauté the ground beef for 5 minutes. Add the onion and garlic, and sauté for 5 more minutes. Drain any excess fat, if desired. Mix in the olives, green Chile peppers, and tomatoes with green Chile peppers, taco sauce and refried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes. Spread a thin layer of the meat mixture in the bottom of a 4-quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, and cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese. Bake for 20 to 30 minutes in the preheated oven, or until cheese is slightly brown and bubbly. Serve like a pie and garnish with sour cream, salsa, lettuce and tomato.

Spagetti and meatballs.Kids like it and easy to make. But try making the meatballs and put them in boiling water for about 30-40 mins. and then add to sauce. They are so soft and taste great. A cook taught me that. Add roll with butter.
