Beat 2 eggs
Stir in 1 1/2 cup milk
Sift together and beat in
a) 1 cup sifted Gold Medal Flour
b) 1 teaspoon baking powder
c) 1 teaspoon salt
Beat in 1 teaspoon melted fat or cooking (salad) oil.
Dip pieces of chicken in batter and fry in deep fat until golden brown.

I love KFC chicken. I have been trying for over 20 years to make chicken as tasty as KFC. I'm close, but I'm missing something.

I do have a broaster...but it never comes out right.

You cannot use a wet batter...it won't work!

I had a chicken cook-off with several people. Mine was good, but someone elses was better and easier.

This is what they do:

Place the chicken pieces in a covered pot with minimal water and simmer for about 15 minutes. Remove and cool (it will be a little sticky).

In a baggie, add flour, salt, pepper, and paprika . Put the chicken in the baggie and shake.

Add 1/4 inch of corn oil to a frying pan. Get the oil hot but not burning. Place the chicken in the hot oil and turn to prevent burning.

Keep in mind that the chicken is already cooked during simmering. The hot oil just makes it look better and tastier when it is browned.

making batter for fried chicken is simple. all you need is some flour(can be plain, but self rising is best), seasonings and some water(some people use beaten eggs, but i find it kind of give the chicken a burnt look and taste). Now if you are cooking breasts or legs, i would use about 4-6 cups of flour and 2teaspoons of black pepper, 1teaspoon of paparike, 2tablespoons of garlic powder and about 1-2 teaspoons of salt. mix all together and taste before adding chicken. if you think it needs something else add it. my suggestion would be to always add salt first this way if any other seasonings contain it you will not end up with a salty chicken. when flour mixture taste like you prefer it to get about 4 cups of water in a seperate bowl and begin dipping chickin it it and the batter in flour and cook in preheated oil at 350 degrees until it floats. when it floats take it out and cut in the thickest part to be sure it is fully cooked. also another trick for chicken is if ou are using breat meat cut across the breast in the thick part before battering it to aid in a shorter cooking time. this should help you out. i know this because i have been cooking since i was a small child and this recipe always helped when i cooked in the restaurant in alabama for 2 years. godd luck and best wishes.

I don't really use a batter. I also don't really measure. I put some flour, pepper, salt and paprika in a bag. I melt some butter and let it cool. After washing chicken pieces, I dip them in the butter then put them one at a time into the bag of flour and shake to coat. I then fry the chicken in a little bit of cooking oil - enough to cover the bottom of the frying pan. (I usually use corn oil.) It takes about 10 minutes a side for the chicken, except if I am cooking thick breasts - they take longer. The meat is done when the meat is no longer pink and the outside is nice and brown.

For a real crispy batter to use a bit of beer or carbonated water into your flour...mix well until quite liquid.

Coat the chicken in flour that has been seasoned with salt, pepper and just about any dried herbs you have in the Kitchent then fry.

MAKE SURE THE CHICKEN IS EITHER IN SMALL CHUNKS OR PRE COOKED!!!!!!!
The chicken could brown well before it's cooked on the inside...I only cook this with pre cooked chicken!

Stephanie gave you a great answer. This is pretty typical of how to coat chicken, but do know you don't HAVE to deep fry it after doing this. You can bake, it, too.

You can soak your chicken in buttermilk roll it in breadcrumbs (you can season it yourself or buy the kind that are seasoned) and bake the chicken on a baking sheet in the oven. This is much healthier than frying it and you'll get nice results without feeling like you are sacrificing taste.

If you don't have bread crumbs, you can do what Stephanie suggested (if you use egg whites instead of the whole egg - it's crispier if you bake it), and after you dip it in flour, dip it back in the eggwhite and roll it into crushed cornflakes (also yummy), or flaked coconut (for coconut chicken) - you can serve this with a pineapple or mango salsa, or you can roll it in chopped nuts or whatever. Be creative and have fun.

They have tons of recipes - just type in chicken and find a variety of ways to make it baked (but tastes like fried) or fried if you want to indulge. But if you are a new cook - BE VERY CAREFUL if you are frying. Hot oil is very dangerous and splatters easily. Baking might be a good first-timer option for you until you get more comfortable in the kitchen.
