They are second or maybe further cousins. You don't say whether the parents are first cousins to your father.
Cousin relationships work by generation.
If you are one generation from the people who were brother or sister to each other you are first cousins.
If you are two generations away from the related people who were brother and sister(grandparents to you) you are second cousins.
Obviously related great grandparents would give you third cousins.
The only other thing to remember is the "removed" qualifier.
If your Dad is first cousins to someone, he is also first cousins to their children - but to them the relationship is "once removed". The cousin relationship is always numbered according to the generation of the individual who is most related to the other branch of the family, and then the number of generations it takes to get to the other persons generation is the count of "removed".

The kids of your dad's first cousins are your dad's first cousins once removed. They would be your second cousins.

If your dad's cousin is his first cousin he is your second cousin and then they are your third cousins. If he is your dad's second cousin then he is you third cousins and his kids are your fourth cousins and so on.
