It's a delightful dish which is served over rice! The best ones are usually found in south Louisiana restaurants. The base is made from a roux and has okra, seafood and seasonings. Here's my recipe:

Shrimp Gumbo


1 stick butter
2 heaping tablespoon shortening
½ to ¾ cups flour
1 medium onion, chopped
1 ribs celery, chopped
1 medium bell pepper, chopped
2 bags sliced okra, fried until not slimy
1 large (28oz) can whole peeled tomatoes
1-2 lbs. Peeled shrimp
1 (1.25 oz) jar Zatarain’s Gumbo File
Salt and Pepper to taste


Make a roux with ½ butter and ½ shortening and flour.
Add onion, celery and bell pepper, saute.
Fry okra well done.
Put okra and a large can of tomatoes in a large pot and add roux mixture.
Bring to a boil, simmer for an hour or more until cooked to pieces.
Drop shrimp in and simmer for a few minutes.
Do Not Boil this!
Add file and seasonings.

Gumbo is a traditional stew served in Louisiana . There is no set formula for what makes upgumbo. Even though gumbo derives its name from the African word for okra, gumbos don't always contain okra.

Gumbo usually consists of one or more meats such as chicken, duck, sausage, or ham. Seafood gumbos can be fish or shellfish, or a mixture of the two. There are gumbos that combine meat and seafood, and the ultimate is the Gumbo Ya Ya, which contains everything that runs, swims, or crawls!

As for vegetables, gumbo always contains the "Trinity" of Cajun-Creole cooking- bell pepper, onions, and celery. Beyond those staples, you may find okra, tomatoes, or mirlitons, a gourd-like fruit.

Gumbo is a mixture of meats, seafood and veggies primarily made in Louisiana. It is of Creole and Cajun origin.

(we make vegetarian gumbo and it is yum oh. I used to eat gumbo back in the day since the fam is from New Orleans)

it is a composition of different meats, sauces, and vegetables. it is similar to beef Stu, except for the more exotic flavors. Very popular in Louisiana and other southern states
