Thank him and just say something like, "Aw, thank you! You are sooo sweet and I hope you don't mind me telling you this but, I prefer my coffee black. I hope I haven't offended you because I really appreciate how much you think of me to bring a latte every morning. I just don't like the idea of you wasting your money on something that's probably more expensive than my simple taste buds can handle".
Then have a little giggle.
Just make light of it, however you decide to tell him.

Just say u have decided to cut back n can't have all the extras and would appreciate it if she gets a coffee for u from now on could u plz make it a black coffee with nothing in it?thx n go as far as to asking her if she likes hers a certain way that u might not know.It's not a big deal u could just come out n say that u prefer it black.

If you are not paying for the coffee, then there is no easy way to be choosy. You have to accept the gift as it is, or else you risk offending the giver.
I suggest you tell your co-worker that you don't feel comfortable with him or her paying for all this coffee every time, and offer to pay for it.
Your co-worker will either stop buying coffee for you, or will continue to buy with your money. And if your co-worker buys with your money, then you'll have no problem telling him or her what kind of a coffee you want.

Why didn't you just tell her you preferred black coffee on day one? Just tell her. You'll look a little silly if you've let this go on for a while. Plus, I think it's your turn to buy the coffee.

when you sit in the Starbuck's say to him: "oh, i like black coffee very much. i just adore it". i think he'll understand if he's attentive enough. or just greet him with coffee in the morning and say that you are ready to make such surprises every day, and you like him doing it - give him black coffee and say that it's your favourite one!

tell him you appreciate it, like my wife i bought her roses for years (3 to be exact) finally she said you know I really don't like rose but it's a sweet thought, I like lily's much better, since then I haven't bought her a rose and she loves the Lillie's I bring home.
So say "Hey I really appreciate the lattes, how about we change things up, I really like black coffee too.
