we're undergoing a full kitchen reno with a 4 x 7 foot island and want to use pot lights as general illumination

All depends on the ceiling space and the $ you are willing to spend. Every "High hat' has to be wired. I recommend them to be no closer then 3 feet.
I say 2 above the Island, 1 or 2 above the sink area. And a few scattered depending on the sq ft of your kitchen.

Just as long as they are symmetrical. Resale must be considered when do a remodel.

Most good designers use a cad design program that includes lighting. When I am working up a full design package, one section is on lighting and other electrical issues. Your designer should be able to produce color images, showing the Kitchen plan and using values for lighting that will "illuminate" the renderings, just like the lighting would. By tweaking this, you can get a good lighting plan, and save time with the electrician.

I'm an Interior Designer and generally we use one per 9'sq. So if you are wanting to have them just over that island 2 is the recommendation.

That depends on square foot buy wattage buy the type of light"soft white,cool blue"but in most cases ten square feet per light for an eight foot ceiling.

28 square ft. 3 would be my recommendation
