This is a 500 year old Italian recipe. It's called "Manasta and Beans".
Use one package of sliced pepperoni. Simmer covered in 1/3 cup of water for 15 minutes. Remove and save the pepperoni.
Drain the liquid in a cup and refrigerate overnight. The oil and orange stuff will solidify. Throw that away, but save the remaining liquid.
In a big pot with a cover, add a little olive oil, chopped garlic and chopped white onion and simmer for about 15 minutes. Add the liquid from the cup and a bunch of chopped mustard greens or escarole, and the pepperoni.
When the greens are cooked (soft) add a whole can of white beans and simmer until the beans are hot.
It is delicious. I'm new to this site...but I hope that you make it and find a way to respond.

HERE ARE A FEW FAVORITES :)
-ITALIAN WEDDING SOUP-
1/2 lb. meat loaf mix (ground beef and pork)
2 tsp. dried parsley
1/4 c. grated Parmesan cheese
1/4 tsp. salt
1/8 tsp. pepper
1 clove garlic, crushed
1/4 tsp. oregano
1/4 tsp. basil
1/4 c. milk
Combine the ingredients above. Form small 1/2 inch balls. Drop into boiling salted water. Simmer for 10 minutes, remove with a straining spoon, place on paper towels to drain briefly, then refrigerate.
1 stewing chicken
1 onion, quartered
4 cloves garlic, minced
1 bay leaf
1 carrot, thickly sliced
2 stalks celery, with leaves, cut up
1/3 teaspoon oregano
4 peppercorns
2 tsp. salt
6 qts. water
Simmer chicken with the reamining ingredients in the 6 quarts of water about 2 1/2 hours or until tender. Remove skin and bones, cut up and refrigerate. Strain broth and return to pot.
Add 1 head escarole, torn into bite sized pieces, black pepper, and red pepper flakes, to taste. Simmer 20 minutes.
Meanwhile, break spaghetti into 4 inch long pieces and cook according to package directions; drain.
Add 1 1/2 cups prepared chicken and meatballs to broth. Simmer 10 minutes more.
Variations: White cannelloni beans may be added; ham or proscuitto may be substituted for chicken.
This freezes well and can be doubled if you have a pot large enough.
-ITALIAN MEATBALLS-
1 lb. ground beef
1 egg
1 c. bread crumbs (Italian seasoned)
1/2 c. milk
2 tsp. grated Parmesan cheese (optional)
1/2 tsp. oregano
1 tsp. parsley flakes
1 tsp. onion flakes, powder or salt
1/2 tsp. garlic powder
Combine ingredients. Shape into 1 1/2 inch meatballs. Place in covered skillet (fry pan) in oven 15 minutes (325-350 degrees). Do not overcook. Turn meatballs over. Cook for another 15 minutes. Drain liquid. Place meatballs in desired spaghetti sauce. Heat until sauce is hot and serve.
-ITALIAN RICE-
1/4 c. butter
1/2 c. mushrooms
1/2 lb. sausage
1/4 c. tomato juice (or 1/4 tsp. tomato paste without seeds)
1/4 c. white wine
1 c. long grain rice
10 c. chicken broth
Grated cheese
Fry in butter, mushrooms and sausage. Then add tomato juice or tomato paste. Cook until practically dry. Add wine and rice. Stir continually after wine is absorbed. Start adding chicken broth in small amounts until rice is cooked (you may not need to use all chicken broth). Stir in cheese to taste before serving.

Gelato--Straciatella, Nutella and Frutta di Bosco flavors. (Wonderful italian ice cream)
Grilled Roman Paninni--With prosciutto, formaggi, arugula and olive oil, grilled fresh.
Nutella--hazelnut spread with chocolate. Outrageously good, you'll never want peanut butter again.
Pasta puttanesca--pasta with a pungent sauce of olives, anchovies, capers, lemons and olive oil.
