12 large eggs
1/2 cup mayonnaise
1 1/2 tablespoons mustard
Salt and pepper
Paprika
Place eggs in a saucepan with water to cover plus 1 inch. On medium-high heat, bring the eggs to a low boil. After 15 minutes from the time they start to boil, remove the pan from the stove and run cold water directly on the eggs for a few minutes. Peel under cold running water, also.
Halve the eggs lengthwise. Remove the yolks, place them in a small bowl, and mash them with a fork. Add mayonnaise and mustard, salt and pepper to taste. Mix well. Spoon the mixture into the egg-white halves. Garnish each with a sprinkle of paprika, a parsley sprig, or as desired and voila! The Deviled Eggs Recipe come to life. Makes 24 appetizers.
Substitute sour cream for the mayonnaise.
Substitute mustard with Dijon mustard or spicy brown mustard.
Add one of the following to the filling: 2 finely chopped green onions, 2 tablespoons minced parsley, 1 tablespoon chopped chives, 1/2 cup chopped shrimp, crab, or salmon, 3 tablespoons crumbled blue cheese, 1/2 cup chopped olives, or 1/2 cup shredded cheddar cheese.
Reduce mayonnaise to 1/3 cup and add 3 teaspoons cider vinegar and 1 teaspoon Worcestershire sauce.
Low cholesterol deviled eggs: Discard all but 2 whole egg yolks. Chop 8 egg-white halves (4 whole egg-whites) and mash them with the remaining egg yolks. Cut the mayonnaise to 1/4 cup and the mustard to 2-3 teaspoons, according to taste. Prepare as directed above. Makes 16 appetizers.

One egg makes 2 deviled eggs so depending on how many you want to make,
Boil your eggs for about 15 minutes
Allow your eggs to cool for handling and then peel them
Cut the hard boiled egg in half (lenghtwise), put the whites on a plate and the hardened yolks in a bowl.
Add desired amount of mayo and mustard (pickle relish optional) (sugar optional) to the bowl of yolks and by using a fork, smash it all together. You may have to do a couple of taste test first for the desired flavor, so keep some plastic spoons handy. I use more mayo than mustard (about 2 to 1).
Take the smashed mixture and fill the inside of the whites.
You can then sprinkle on some paprika or pepper over the filled eggs ( this too is optional).
Refrigerate the filled deviled eggs and serve!

Boil however many eggs you want.
Don't boil too hard as it will crack the eggs and cause the whites to bubble out.
When done, let the eggs cool a bit by sitting in cool water. Remove the shell by tapping slightly to create a crack then peel off the remainder.
Using a sharp knife, carefully cut the eggs in half lengthwise to retain shape.
Set aside the yolks (yellow) in a separate dish.
The yolk should be solid and no liquid.
Crumble the yolk and add a few spoonfuls of mustard. This can be regular yellow mustard, brown mustard, or any other choice. Mix until it is a bit creamy but not runny.
Add a spoonful of this mixture to each egg half.
Sprinkle a bit of paprika on top.
Arrange neatly on a platter.
Yummy!

This is the easiest recipe that I know! Hope you will like it!
Traditional Southern Deviled Eggs
6 Lg. Eggs, hard-boiled and peeled
1/4 C. Mayonnaise
1 and 1/2 T. Sweet pickle relish
1t. prepared mustard
Salt and Pepper
Paprika
Optional: Sweet Gherkin Pickles and Sliced Pimentos (just for decoration on top)
Halve eggs lenghtwise. Remove yolks and place in a small bowl. Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard. Add salt and pepper to taste. Fill egg whites evenly with yolk mixture. Garnish with paprika. Garnish with sweet gherkin pickles and pimentos if desired. Store in refrigerator.
These are delish!!! I usually leave off the sweet gherkin pickles and pimentos, but it's a personal choice. Also if you are looking for some variations on deviled eggs, look on the paula deen website (www.pauladeen.com), she has recipe's for any type of deviled egg you can think of. Good luck!

Let the eggs sit out until they become room temperature. Put them in a pan with enough water to cover them nicely. Set the burner to high and let the water boil. When it reaches a high boiling point. Turn the burner off and let the pan sit there for about 20 minutes.
Drain the eggs and let them set until they become room temperature again. Peel them, cut them in half lengthwise. Scoop the yellow out into a bowl. Mix in a little salt and pepper, a dab of mayo, maybe a little rinsed pickle relish or chopped pickles. You want to put as little moisture into the filling as possible because they won't set up right if you do. Then fill each egg half with the mixture and sprinkle with a dash of paprika. Put them in the fridge and let them set up for awhile.

Boil 6-7 eggs, cool, and peel. Cut them in half and scoop the yolks into a bowl and mash with a fork. Add a good Tbsp of mayo, 1 good tsp of dill relish, and about a Tbsp of Dijon. Mix well, add some dried dill, pepper, and less than a tsp of white vinegar. Mix, place in a ziplock, snip the corner off and pipe into the whites. Sprinkle with paprika and maybe garnish with green or black olives.
