I would make a pinapple upside down cake . It is very good and eight pinapple rings would be just the right amount .

I would cut the rings into chunks. Put them in a skillet over medium heat with just a pat of butter. Let them carmelize and get super sweet, add some cinnamon and then put the warm pineapples over vanilla ice cream!

Make a tempura batter, dip them into it and deep fried them until they are a light golden brown (they'll float) and drain the off on a paper towel and serve them warm with a scoop of vanilla ice cream! Yummy!

My grandmother used to make pineapple salads. On a lettuce leaf put a pineapple slice or two, top that with grated cheddar cheese or with cottage cheese, then put a dallop of mayonnaise, top with a cherry. Ola!!
