I want to use what I have in hamburgers for dinner this eve. The date does'nt expire for 2 more weeks- I opened it about 6 weeks ago... Is there a way to know if blue cheese has gone bad?

Just taste it. I don't think that opening will hurt it other than drying it. Cheese spoils from being contaminated by other bacteria and it should be apparent visually. The blue veins in the cheese that flavors it are from colonies of Roquefort or other blue producing mold. I'm surprised that it would stay uneaten that long.

It's actually one of many penicillin molds.

My recent container of blue cheese became buried in the lower back of my refrigerator. When I opened the lid, the cheese was shriveled and brown. (No other signs of mold present.)
The cheese should be white with the blue veins. Plump and not shriveled like raisins..
