Fish Sticks in a Flash
Makes 4 Servings
Ingredients
* 1/2 cup cornmeal
* 1/2 cup Parmesan cheese
* 3/4 teaspoon garlic powder
* 1/4 teaspoon salt
* 3 tablespoons canola oil
* 1 pound farm-raised catfish fillets, cut into 1-inch thick strips
Instructions
Preheat the oven to 475°F. Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside. Combine the cornmeal, cheese, garlic powder, and salt in a medium bowl and mix well. Place the oil in a small bowl. Lightly coat each piece of fish in the oil and then roll in the breading until well coated. Arrange the fish on the prepared baking sheet and bake until golden brown, 10 to 12 minutes.

I used to make Kraft fishsticks all the time for my kids. Unfortunately, they got bored of it. I came across this recipe a while ago and let me tell you, they demand it at least once a week. The ranch taste gives the fishsticks a little kick you won't find in any packaged frozen box. Here's the recipe, try it.. it's so easy to make.
INGREDIENTS
1 pound fresh cod or halibut
Salt and pepper, to taste
1 cup Hidden Valley® Original Ranch® dressing, plus extra for dipping
1 cup flour
3 eggs, beaten
1 cup breadcrumbs
1 tablespoon oil
DIRECTIONS
Cut fish into 2-inch sticks; season with salt and pepper. Place Ranch, flour, egg and breadcrumbs in separate bowls. Lightly coat each fish stick with dressing and dredge in flour. Dip in egg and then dredge in breadcrumbs until completely covered.
Heat oil in large saute pan. Carefully place fish into the pan and saute until golden brown on all sides, about 10 minutes. Serve with Ranch dressing for dipping.

Fish Nuggets w/ Tartar Sauce
Fish Nuggets
1/2 lb fish fillets (cod or any other firm fish)
1 tablespoon lemon juice
3 tablespoons milk
1 egg
2 tablespoons Dijon mustard
2 tablespoons yogurt
salt
pepper
breadcrumbs
Prepeat oven (395 F, 200 C). Line out a baking tray with baking parchment.
Cut fish fillet bite-sized pieces (nuggets). Drizzle with lemon juice. Sprinkle with salt and pepper to taste.
In a bowl combine milk, egg, mustard and yogurt. Mix well and add salt and pepper to taste.
Dip the fish nuggets into milk mixture to cover nuggets with the sauce.
Take nuggets out of the sauce (using a fork) and let drip off excess of sauce and coat with breadcrumbs.
Place them on the baking tray and bake them for 10 minutes. Then heat up the oven and broil them until they are golden brown.
Take them out of the oven and serve them hot with your favorite sauce, salsa or dip.
NOTE: Can easily prepared in advance and freeze. Follow the directions and bake them only for 10 minutes. Take them out of the oven and freeze them. To serve: take them out of the frezer, thaw and broil them until they are golden brown.
NOTE: I do not have given the amount of breadcrumbs needed. Sometimes I need more, sometimes less. But coat the nuggets only with a thin layer of breadcrumbs. You can replace the breadcrumbs by grinded almonds. This will add a nutty flavor to the nuggets.
Tartar Sauce
1 cup mayonnaise
1 teaspoon prepared mustard
2 tablespoons chopped sweet pickle
1 tablespoon chopped drained capers
2 teaspoons chopped fresh parsley
PREPARATION:
Blend well; refrigerate and chill thoroughly. Makes about 1 1/4 cups of tartar sauce.

Fish and Chips with Tartar Sauce
Recipe courtesy Sandra Lee
Fish Fry:
Vegetable oil
3 cups dry wheat breakfast cereal squares
1 cup all-purpose flour
1 packet garlic ranch dressing mix
1/8 teaspoon salt
1 pound Halibut fillets cut into 3 by 1-inch strips
2 eggs, lightly beaten
Chips, recipe follows
Tartar Sauce, recipe follows
Fill fryer with vegetable oil to its maximum level, or fill a deep pot no more than halfway with the oil. Preheat fryer to 350 degrees F.
Fill a gallon resealable plastic bag with 3 cups wheat cereal. Using a rolling pin, lightly crush cereal into small crumbs. Set aside.
In a shallow bowl, combine flour, ranch dressing mix, and salt. Coat fish with seasoned flour mixture then shake off excess flour. Dip in eggs and roll in crushed cereal. Continue with remaining fillets. Carefully add 3 to 4 pieces in fryer and cook until golden brown and crisp. Repeat with remaining fillets.
Serve with tartar sauce and seasoned chips.
Chips:
1 (1 pound) bag frozen extra crispy golden crinkles fries
No-salt "season-all" seasoning spice
Preheat oven to 450 degrees F.
Arrange fries in a single layer on a sheet pan. Sprinkle liberally with seasoning. Bake for 15 minutes or until golden and crisp. Seasoning will act as a substitute for ketchup.
Tartar Sauce:
1/4 cup sweet relish
1 cup mayonnaise
1 teaspoon yellow mustard
1/2 lemon, juiced
Salt and pepper
In a small dish, strain relish and discard juices. In a separate bowl, combine strained relish with mayonnaise, mustard, and lemon juice. Stir thoroughly. Add salt and pepper to taste. Serve with fried halibut.
