I am trying to buy a good Balsamic vinigar but dont want to pay the earth. I know the saying - you get what you pay for - but if there is a chef out there, do you know of one that is very good but not too expensive. thanks

"Aceto Balsamico Tradizionale di Modena" is a wonderful aged vineager and you can buy it at many local organic vendors and online. It is a bit pricey but any good aged balsmic is. Another thing you can do is to buy a cheapo balsamic and pour it in a heavy bottomed pan.Slowly reduce it over medium heat and it will thicken enhancing the flavor. Be aware that this does smell up the house a bit though!!!

The absolute best buy for the money and quality is 'Kirkland Signature' at Costco. I paid around $10 for 1 litre (33.8 oz)
