FUDGE IT! can any one help?! please!?any one know of a really good recipe for vanilla fudge? thats works every time if possible? i cant seem to find any good ones. please help?

Add what you wish to this recipe, ie. nuts, if you do roast them first.

Vanilla Fudge


Ingredients:
3 cups granulated sugar
3 tablespoons light corn syrup
1 1/2 cups light cream
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract

In a saucepan, combine sugar, corn syrup and cream.
Bring to a boil and cook without stirring until a small amount of mixture forms a soft ball when dropped in very cold water (236*F / 110*C on a candy thermometer).
Remove from heat and let stand until lukewarm (110*F - 45*C).
Add salt and vanilla and beat until mixture thickens and loses its gloss.
Pour into buttered 8 x 8 x 2-inch baking pan and let stand until firm.
Cut into squares.
Makes 1 1/2 pounds.

this is THE BEST vanilla fudge ever...it nevers fails! ENJOY!

2 cups sugar
2/3 cup evaporated milk
1/3 cup milk
1/8 teaspoon salt
1/4 cup butter
1 tablespoon vanilla
walnut pieces (optional)

Butter sides of heavy 2 quart saucepan.
In saucepan combine sugar, milks, and salt.
Cook and stir over med.hi. to boiling.
Clip on candy thermometer and cook and stir over med.
low heat to 238*, soft ball stage.
Remove fron heat, add butter and vanilla, DO NOT STIR.
Cool to 110F degrees.
Remove thermometer.
Beat with wooden spoon till fudge becomes thick and starts to lose it's gloss.
Pour into a buttered 8 inch pan.
Score into squares.
If desired top each square with with a piece of nut

The quickest fudge recipe that I have found calls for 1 can of any flavor of frosting (in your case, vanilla) and 1 bag of melted chocolate chips (again, vanilla). Stir them together, add anything else you want (i.e. nuts, fruit, etc.) spread in a pan and let set. I know it sounds too easy to work, but it is really good stuff :)
