Less formal, you can write :

You should use her nun name only. Don't use her family name.

If she is "Sr.X", i. e. not the superior of a congregation, I think "Chere Soeur X" would be in order. Or you could say, even more formally "Ma soeur" but without any name. If she is a superior you should say "Reverende Mere=Reverend Mother"
