I dice cilantro leaves often and it is SO difficult.

i just cut mine with clean scissors.

After rinsing them out I usualy fold them over twice to form a very tight bunch and then mince them that way although you still end up having a lot of it stick to your hand or your cutting board.

Or you can try using your food processor if you have one, even then you have alot sticking to the inside of the processor.

Then again it depends what you are using your cilantro for in your cooking.

If it's used to cook hot dishes like meats or beans or rice then you might want to make a "sofrito" which can be made and then frozen for months on end. Then each time you need some you just take it out of the freezer no chopping required.

Saves money and time and makes food taste amazing, smells great when first added to the pot too!

P.S. Like one of the commentors mentioned I use the stem and the leaf (makes for easier cutting since I use cilantro in almost all of my cooking)

twist the green leafy part to rip from the stems. it doesn't matter if you get some stem in there; cilantro is one of the only herbs that doesn't have bitter stems. if you have a food processor, throw it in there and just pulse it until it's the consistency that you want it. otherwise, just run a sharp chef's knife through it until it's the desired chop. keep the point on the cutting board for control.

you can put them in a food processor or robot coupe and do it that way. just be sure to pulse the power so you dont puree the cilantro

I bought a pair of scissors and keep them in a ziplock and only use them for food.......scissors are so handy when chopping herbs. Another weird trick......use a pizza cutter to cut up pancakes. I have 4 kids and it takes forever to make their plates.

try to roll or fold them up, makes it easier or do what i do, use your food processor.

its hard to chop it small, so i use a mini food chopper..
