The word most probably derives from Chinese Pidgin English. "Chop chop" meant "quickly" in it.
Also, in most varieties of modern Chinese the word for chopsticks is "kuai", which means also "fast".
Thus why chopsticks are so called is pretty logical, they are sticks the Chinese call "fast".
