I would like to build my own easel, but cannot find the ratchet part. Can anyone recommend an online store?

I'm not sure where you would find the ratcheting mechanism. You might want to check this site out though: http://bengrosser.com/easel/index.html
He has free easel plans available and photos/descriptions of mods made by others who built the easel.
There is also this page that shows a photo of an easel that uses a weighted counterbalance for height adjustment. http://home.comcast.net/~prescottbehn/ Parts for the counterbalance system should be available at Lowe's or Ace Hardware. The counterbalance system looks fairly simple in the pic.

dunno! why a ratchet? why not just use wingnuts with washers and screws, keep it simple.
