Actually you don’t even have to put in the vanilla extract. It gives it some extra flavor but you don’t need it.
What you could do for the future is buy whole vanilla beans and slice them open. Then scrape off some of the inside. Fresh vanilla flavor.
On another note, alcohol does burn off when its cooked, I don’t know if that will make a difference in weather you can use it or not though.

Vanilla Powder can be used for any recipe that calls for vanilla extract. It will add more flavor to your baked goods or drinks than ordinary vanilla extract. Its made from hand picked vanilla beans and doesn't contain alcohol.
Substitute 1/4 teaspoon vanilla powder for each teaspoon vanilla extract called for in a recipe

The vanilla is added to your recipe only for the delicious, indescribable, je-ne-sais-quoi flavor that it will impart, not as an essential bit of extra moisture. So you can just leave it out entirely.
There are other extracts that can sometimes be substituted for vanilla — almond extract is one choice. Rum extract is sometimes used.
But I don't really know of a flavoring that would definitely improve your cookies, so why risk messing them up with an experimental ingredient? They will still be delicious.

you can probably use what you have left...i never put all the vanilla in a rec. that it calls for and it usually turns out ok.
have you tried going to a "whole foods" store? they might have some w/o the alcohol. or you can always buy a vanilla bean and soak it in water (I think that is how you do it) to extract the flavor.

Pure Vanilla extract does not have alcohol. It costs more but tastes better!!

I odn't know much, but I tell you what?
Since so much of taste is scent, you could probably burn avnilla candles and trick someone's tastebuds into thinking it's there.
I know, because we only had vailla candles to light at our dinner table, and I swore I tasted vanilla bread!
