South Florida - Around Miami
Oleata State Park (North Miami Beach area)
Markham Park (Weston)
Amelia (Opa Locka)
Near Orlando -
Santos Trail Head (Santos)
Razorback (Reddick)
Near Tampa -
The TOE (Lakeland)
Alifa (Tampa)
There's more places but that's all I can think of right now.
I have yet to ride the places I have mentioned in Tampa but I frequently ride all the others. Some of the places mentioned are only for advanced riders, The TOE and Markham. But all the others offer a variety of great trails.

There are always races around Florida it just takes a little internet surfing.

depends what type of cycling you want to do. The three most common kind are Road Bikes, Mountain Bikes, and Triathlon Bikes. Each one's name is pretty self explanatory. First way to start, go to a bike shop... not walmart or target... a real bike shop. You could check the yellow pages to find them. Talk to the people and tell them what exactly you want to do with the bike and how often you plan to use it. Next, for mountain biking... literally, just go out to the trails. You can go to www.singletrack.com to find some around where you live. You could also check www.mtbr.com and they have reviews on everything from bikes, to components, to trails. For road bikes, you will ususally see people congregating or on their ways to a place designated for cycling. Around golf courses is pretty standard. Again, ask the people at the bike shop. For triathlon bikes, you'd want to talk to the people at the shop and look around parks or stadiums for flyers about the events.
I live in florida now, southern florida. But, i grew up in washington state and believe it or not, Florida has some pretty nice trails to go riding in. Obviously not like up north but really nice trails. Its pretty cool to see what the floridians have done with what they have been given. If you need any other advice, feel free to contact me. First off buy the appropriate gear, Bike, Helmet, and so on. I don't know your location here in Florida, but if you want too know about Events Check this site http://www.floridabicycle.org/fbtc/ it will tell you about local events as well as some in Georgia and some other places as well.

Buy really tight bike pants, with a cool helmet. Ride around the strip of Fort Lauderdale beach in Florida! They will ride next to you asking you "Hey dude, want to ride with us"
