They are the worst things in the middle of the night. Is there a food that triggers them? What's the best prevention?

Two things: dehydration and/or potassium deficiency.

First, make sure you're getting plenty of water.

If that alone isn't working, eat at least half a banana every day.

There are really no foods that can prevent a Charlie Horse but the reason why they happen is because they are not being used for quite a while and then suddenly they are being called into action. The best way the resolve the problem is when it occures is by massaging the muscle in question. Some other causes of cramps are Dehydration, Mineral imbalance, or hormonal imbalance. If your cramps are so severe go to your doctor and get some tests done to find out if anything is seriously wrong. I hope this helps

Much pain is from muscles below is an example of what may help (based on headaches).
Begin with a couple swigs of molasses or a couple of bananas daily (natural muscle relaxers) - magnesium (which regulates many things in the body) and potassium (a needed building block for muscles).

Drink at least 1/2 gallons of water per day. Running a body low on water is like running a car low on oil is the analogy the head of neurology at UCDavis told my husband about 10 years ago.

Now to the cause - muscles - your back, neck shoulders and head have tender spots. They are knots in the fibers of the muscles called trigger points. It makes the muscles tight which makes them press on nerves and other things causing the pain.

The cure - start with a professional massage, you will also want to go back over any place you can get to 6-12 times per session up to 6 times per day rubbing (or lightly scratching on your head) every where that is tender until the knots go away. The place where the skull connects to the spine press up under the edge of the skull (to get to those muscles).

Bananas can help to stop those really annoying (and painful) leg cramps aka charlie horses. Nothing can make you go from laying down to standing up faster than that!

I'd say that you're lacking potassium in your diet. Try eating bananas or anything that has lots.

go to your docotr's and ask for a n RX for Quinine it works wonders....
