Is there a difference? I mean - does one taste fresher & less fishy than the other? Pouch versus canned?

Any albacore in water is good. I prefer canned.

They really don't give much information about the differences in Tuna. Star Kist is the top brand. The best variety is Albacore or Bonita, which is caught in the waters of the Caribbean. The Chunk Light is a different Tuna that's caught in the waters of the Pacific. Chunk Light has higher levels of Mercury. Some people like it packed in water and some like it packed in oil. I buy it packed in oil and can always rinse it in a little warm water and it becomes packed in water. Canned is less expensive than in the pouch.

I prefer the kind I get at the health food store-it is Natural Sea solid white albacore. Most tuna that is labled "packed in spring water" is actually packed in soy broth, which I am allergic to. The soy used is genetically modified and contains many toxins. I like the albacore tuna, as it is less fishy

Personally, I prefer fresh!
However, if you live in the U.K., there's 'John West'.
