what should i make for dinner ???/ i have three small children and my hubby isnt too picky. any ideas i think i have made almsot everything possible with chicken?????? any # of ingredients thanks so much

Chicken sandwiches:

Ingredients:

4 skinless, boneless chicken breast halves (about 2 pounds)
Salt and pepper
1 onion finely chopped
4 cloves garlic, finely chopped
1 1/3 cups barbecue sauce

1/2 cup apple cider vinegar
Hot pepper sauce
6 kaiser or French rolls, split
6 ounces shredded Monterey Jack cheese (about 1 1/2 cups)





1. Season the chicken with salt and pepper and place in a heavy pot with the onion, garlic and just enough water to cover (about 1 1/2 cups). Add the barbecue sauce, vinegar and a few drops hot sauce and bring to a boil. Reduce the heat and simmer until the chicken is cooked through, about 15 minutes. Remove the chicken from the sauce and shred with two forks.
2. Boil the sauce, skimming occasionally, until reduced by half, about 15 minutes. Season with salt and pepper. Add the shredded chicken and heat through. Spoon the mixture onto the rolls and top with the cheese.

This is my all time favorite chicken recipe. My daughter LOVES it.

Start with a good size skillet over medium heat. Bring a pot of water to boil for some spaghetti (any kind of pasta really). Cover bottom of pan with extra virgin olive oil and a pat of butter. Let the butter melt then add 5 or 6 cloves of garlic (you can leave whole or chop them up, depending on how much you like garlic) and a pinch of crushed red pepper flakes. You can add a shallot or a small onion, if desired. Let that go for a minute and cut up 2-3 chicken breasts into bite size pieces. Add the chicken and saute until cooked through. Once done, sprinkle in a handful or 2 of parmesan (parmigiano-reggiano is best) cheese (grated). Once spaghetti or pasta is done, mix together and serve. It's YUMMY!!

one of my favorite chicken dishes is chicken Alfredo. I fry my chicken breast using as little oil as possible, then I cut it up into bite size pieces once it has cooled. I also make a mock Alfredo sauce by using a block of cream cheese. I let that sit until it is room temp or defrost for a couple of seconds in the microwave. I melt it in a saucepan, low heat, with a little butter and milk, takes quite a bit of milk. I add garlic,Parmesan cheese, salt and pepper and some nutmeg (this is an important ingredient) as its cooking, I taste it to determine how much spice I need, I hardly ever measure anything. I boil my pasta, any kind that is easiest for the kids to handle. I microwave my frozen veggies. ( broccoli,carrots, onions)whatever your family likes. I mix the veggies and chicken in the sauce and make individual servings because some of us like more sauce than others. Serve with garlic bread and some applesauce for the kids. I like the individual cups of applesauce because of the flavors that are available and I usually throw away the big jars because it goes bad too quickly once you have opened the jar.

Pecan Chicken with Dijon Sauce

Ingredients:

4 boneless chicken breasts
1 1/2 sticks of butter
4 tablespoons Dijon mustard
6 ounce of pecans, finely ground
2 tablespoons canola oil
2/3 cup sour cream
1 teaspoon salt
pepper to taste

Preparation:

Place chicken between 2 pieces of waxed paper and pound gently until about 1/4 inch thick.

In a microwavable bowl, melt 1 stick of butter and 3 tablespoons of the mustard until just melted. Whisk to incorporate. Place the pecans on a dinner plate.

One by one dip the pounded chicken breasts into the butter/mustard sauce then into the pecans, coating thoroughly.

Melt the half stick of butter in a skillet, add the oil and heat to medium. Sauté the chicken for a few minutes on each side to brown and transfer to a casserole dish. Place in a medium oven (300°F) for about 6 more minutes.

Drain the pan of oil and deglaze with the sour cream, stirring with a whisk over medium heat. Add the remaining tablespoon of mustard and season with salt and pepper.

Place a pool of the sauce on each of four plates and place the cooked chicken on top.

Marinade it in italian dressing and grill it... OR... if you want to do chicken tenders, slice down the chicken to 1/2 inch pieces, fill a skillet with oil. Mix a cup of baking mix (bisquick or off brand) with a 1/2 tsp of salt and 1/4 of pepper in a medium mixing bowl. Whip an egg in another bowl. Dip the chicken strips in the egg and make sure they are covered, dip into the baking mix and cover again. put into skillet with oil and fry until golden brown on both sides. My fiancee and I love this recipe and kids will love it too! It's from a low carb recipe book, I'm sure the oil isn't great but it tastes good!

Make Smothered Chicken. Marinate in teriyaki marinade all day. Cut up an onion and a green pepper in strips. Buy fresh mushrooms. Put all in a baking pan. Bake at 350 for 45 minutes. Use a shredded colby jack cheese blend to sprinkle on top.

Chicken Enchilada Casserole

1 – 1 ½ lb boneless chicken, cut into bite size chunks
1 can cream of mushroom soup
1 - 8 oz carton sour cream
1 small can chopped Ortega green chiles
1 sml package flour tortillas, cut or torn in small pieces
8 oz jalapeno or regular jack cheese, grated

Cook chicken in skillet with a little water and ½ tsp garlic salt or powder, until no longer pink Remove and reserve.

In a bowl combine the next four ingredients, plus 6 oz of the cheese, and the chicken. Mix well and place in greased casserole dish. Top with remaining cheese and bake at
350 F for 1 hour.

Serving suggestions: Mexicorn and Mexican rice.


Chicken and Dumplings

1 whole chicken
1 bay leaf
2 tsp garlic salt
6 black peppercorns
6 cups of water
1 cup baby carrots
1 package refrigerator biscuits (10 – 12)

Place chicken in crock pot and add everything except carrots. Cook on low for about 8-10 hours. Remove chicken and de-bone. Pour broth into large pot on stove and heat until boiling. Add carrots and cook for 30 minutes. Thicken broth with cornstarch or flour mixed with cold water. Tear refrigerator biscuits into 3-4 pieces each and drop into boiling broth, lower heat and cover. Simmer for about 5 minutes, until biscuits puff up. Add chicken and carrots, stir, and serve.

I make chicken casserole ( i made it last night) and its a huge hit with my son...

Ingredients
boneless chicken breast
2 cans cream of chicken soup
2 cans cream of celery soup
1 can cream of mushroom
1 box stove top stuffing

Directions:
Boil chicken breast until fully cooked drain and run cold water over the chicken.
Shread chicken and add to caserol dish
add in all liquid ingredients
salt and pepper (to taste)
Cover entire dish with stove top
cook on 325 for 30-40 minutes.

I like to include mashed pototos and yeast rolls.

Get some minute rice, put it in the bottom of a baking pan. Cover the rice with a single layer of boneless chicken breast. put salt, pepper, garlic salt, onion salt on the chicken. mix a can of cream of chicken soup and a can of cream of mushroom soup and 1 can of milk together and put this over the chicken. bake until the chicken is cooked, adding water or milk until the rice is cooked. top with shredded cheddar cheese and bake until the cheese is golden brown.
