Bridget C has got the ingredients about right, although ideally a little drizzle of olive oil is authentic. So do you have the right proportions?

Tahini can be "bitter", you should use no more than a couple of large tablespoons per tin of chickpeas.

Raw Garlic is very bitter, how much are you using? I use no more than two medium sized cloves per tin. Are you blending these into the Houmus fully. It really has to be totally pureed to do its work.

You could add extra lemon juice to balance the bitter with sour. Good luck with your next attempt.

Below is a link to a recipe for Lebanese houmus:

I'm assuming that you're using chick peas, tahini, and garlic right? Add the juice of 2 lemons and olive oil, which cuts through the bitterness, and then add your olive oil, salt & pepper. I like to add a little bit of smoked paprika too, that makes it a tiny bit sweeter, or chili powder if you don't have that.

Try substituting the tahini with peanut butter and add some good olive oil.
