Unlikely, but not impossible. La Men TEE uh would more readily lend itself to other anglicanizations than Latimer. But you'll only know for sure if you do the research on the individuals and see if they evolved the name.

Individual Italians might have chosen to do that, but Latimer is a long established Englsh surname. For example, the Reformation Bishop of Worcester, Hugh Latimer.
