Just tell them you don't like a certain type of food, that should be acceptable. There truly should be no need to claim an allergy, everyone has certain foods that they don't like. I wouldn't try the 'delcicious but I'm full' thing, that'd only work if you were somewhere at a restaurant where you're never going to return! If you ever do return to this person or place, it'll only backfire in that they'll make sure to get you some next time!
But many people have some kind of food they don't like, if someone doesn't accept that it's extremely impolite of *them* and as long as you phrase yourself in a normal way ('sorry, I just don't like x' instead of 'blwaaaaagh, gross') you're perfectly fine being honest and straightforward.

First I politely decline and say that I am not fond of that type of food. If the person asks why I tell them I had a bad experience with that specific type of food as a child and it has made me feel extremely ill every time I ate it since. The person usually drops the topic after that, nobody has ever inquired as to what the bad experience was.

The only polite way to turn down a food offering is to tell that person you're allergic. They will totally back down and you won't come out rude.

'No thank you, I don't care for any.' You don't have to go into any more detail than that. Be polite, firm, and act like it's perfectly normal to simply not like a food (it is).
