TOP RAMEN CHICKEN SALAD
2 pkgs. Top Ramen chicken flavored noodles
3 chicken breasts, cooked
1/2 head shredded cabbage
3 tbsp. toasted sesame seeds
3 tbsp. toasted sliced almonds
3 tbsp. sugar
3 tbsp. lemon juice
6 tbsp. oil
1 tsp. Accent
1 tsp. salt
1 tsp. pepper
1/2 c. each red, green, yellow sweet peppers
1 sm. can sliced water chestnuts, drain
1/2 c. chopped green onions, tops too
Remove soup packets and set aside. Crunch up dry noodles and place in large bowl. Add cabbage, peppers, onions, water chestnuts and chicken (chopped). Mix in another small bowl sugar, lemon juice, oil, accent, salt and pepper and contents of the two small soup packets. Mix well. Add sesame seeds and pour dressing over all. Mix thoroughly and cover.
Let it set for 24 to 36 hours before serving, tossing it several times. Scatter toasted almonds on top before serving. Do not cook noodles. You can vary this salad by using shrimp flavored soup and putting in baby shrimp, or omit meat and serve vegetarian.
Serves: 10 to 12.

CURRY RAMEN SOUP
3 baking potatoes peeled and diced
5 small carrots sliced
2 onions diced
2 lbs diced chicken breast
1 tbsp seasoning salt
1 tbsp black pepper
1/32 tsp cayenne pepper (a pinch)
2 Maggi beef bouillion cubes
8 tbsp curry powder (divided)
oil
ramen noodles
At Medium setting, heat 3 tablespoons of oil in a skillet and sprinkle half of curry into the oil. When the curry starts to foam, add the onions and carrots and sautee until onions are translucent. Remove from heat and transfer it into a soup pot. Add potatoes and enough water to cover potatoes. Bring to a boil and simmer.
In a bowl, place chicken, seasoning salt, black pepper, and cayenne pepper. Mix well until the chicken is evenly seasoned.
In the skillet, add 3 tablespoons of oil and sprinkle remaining curry into the oil.
When the curry starts to foam add the seasoned chicken mix and sautee on a high heat. Chicken does not need to be thoroughly cooked.
Toss the sauteed chicken into the soup mix, and simmer until potatoes are cooked and the broth is thick (about 30 min).
Cook Ramen according to package directions. Serve Ramen and pour soup over it.
Serves 8.
This goes great with fried ripe plantains

Actually, u can add in some chickens, sausages and also seaweed to make it taste better. If not, kimchi soup and noodles itself already tast yummy!

save some of leftover meat from dinner (chicken, beef, spicy chicken, pork) cut up, cook noodles and drain water, add some soy sauce and add meat. also if you have the time cook up some frozen veggies and add to make a stir fry.

i boil them to just al dente, drain and then stir fry them in a bit of oil and then pour about 3tbl. of this thai sauce i found at my grocer. the kids and i love this stuff!
