starches are complex carbohydrates which is just another name for sugars

starch makes up about 60% of your carb intake. it's just long chains and brances of glucose. for the most part its used for energy, whether that is immediate, short term (glycogen), or long term (being stored as fat). as your body breaks down glucose via various enzymes and reactions, energy is released in the form of ATP/NADH/FADH2/GTP, which can then be used to make other body functions happen.

glucose from starch can also be used to absorb other compounds. one example i can think of is sodium. they're both absorbed into your cells via the same transporter complex.
