I am making a pie similar to a custard pie. The egg yolks are part of the custard. Many of you stated that I had not supplied enough informtion-I agree.

What is the recipe? Like a cake recipe, or what?

egg yolks have many funtions in a recipe... it would help if you specify what you're trying to make...

Egg yolks provide fat, acts as an emulsifier (helps water-based liquids and liquid fats to combine instead of separating), helps to tenderize a cake and provide richness and retain moisture.

Some cake recipes you can use applesauce as a substitute for eggs... you can add a little extra oil if you use applesauce to keep the "richness" at a simlar level.

For salad dressing, egg yolks are used as an emulsifier... you can use dijon mustard in it's place. Dijon mustard as some emulsifying abilities.

You can try "egg beaters" . You can find this at your local grocery stores. But it also depends on what you are baking. There are also other brands that you could use. I prefer to use this brand because it comes close to the natural taste of an egg. It won't give you that nasty diet like taste.

There are many egg-substitutes you can buy at a grocery store, most are potato-starch based and are made to immitate the baking characteristics of eggs.

It depends on the thing you are trying to make.

Applesauce works, albeit it has a slightly different end taste.
