Jello parfait.

I think it was one box of pre-pared jello folded together with whipping cream. Every family gathering had to have it.

Mom's gone. I haven't had Jello parfait in years.
I don't miss the parfait. I do miss mom.

Roast beef, mashed potatoes, and peas. Sunday dinner for all of my younger life. This was the dinner I most remember followed by beef stew, a more mundane use of the leftovers. We were the typical Irish family with five kids, the drunken father, the subservient mother and the boisterous occasions.. Good memories and bad. The older you get the less you remember the bad times and cherish the good ones.

Different foods remind me of different stages in life. It's always the bad-for-you yummy stuff that keeps the memories alive.

Early Childhood: Meatsticks and cottage cheese
Later Childhood: Mac and cheese, egg salad sandwiches,
Tween: Pizza
Everything else: Chicken pot pie, apple cobbler

My grandma's goulash, and the dinners she had in her dining room. Even for a weeknight dinner she'd put the table pad on, a tablecloth, good china and silver. And her mashed potatoes and gravy were the best.
