Wont wesson vegetable oil (soybean oil) work to do french fries. i put in potato slices and oil foamed over the big daddy electric cooker. so what do i do next time.

Cold product hot oil, expansion, not foam, boiling oil. Reduce the amount of oil in the cavity, shouldn't be more then half full. Soybean oil is excellent for frying, smoking point at about 450

If you did have your "Big Daddy" only half full of oil and it still foamed over, you probably had too much water on your potatoes.

When you cut your potatoes for French fries, put them in very cold water (or even ice water) to soak until just before you're ready to fry them. Then drain the potato slices and dry them thoroughly on paper towels. See if this helps.

Yes, that should work . Put your fries into hot oil slowly and do not overload the deep fryer or electric cooker. That is dangerous so make sure that you drain off the water from the fries. before you put them in oil.

I use Weston Vegetable Oil and it works just fine but, the first time I ever used my fryer I filled it up too much and it foamed over. That is probably what happened to you.

The outright tastiest, and least healthy, choice is coconut oil. Make sure that you only fill the oil level to half way, and that it's fully heated before you put the potato in. To check if it's ready, flick a drop of water in and see if it sizzles.

Peanut oil is better, and a little used oil mixed in with the new will do even better (because of the chemical soaps).

use corn, vegetable, peanut, or canola oil. I'm guessing soybean oil doesn't work with high heat levels .
