This is the best I can do off the top of my head.

God told Job in 1500 B.C.: "Can you send lightnings, that they may go, and say to you, Here we are?" (Job 38:35). The Bible here is making what appears to be a scientifically ludicrous statement—that light can be sent, and then manifest itself in speech. But did you know that radio waves travel at the speed of light? This is why you can have instantaneous wireless communication with someone on the other side of the earth. Science didn’t discover this until 1864 when "British scientist James Clerk Maxwell suggested that electricity and light waves were two forms of the same thing" (Modern Century Illustrated Encyclopedia).

Look, I think I could be considered by some to be a fundamentalist evangelical Christian Baptist pastor. (I would use the term "conservative" rather than "fundamentalist".
But if she has to have a Bible reference for a project on electricity produced from fruit,, then you should:
1) check out with the teacher(s) and see if she really has to have a Bible reference for that, and if it turns out to be true
2) Change her school - fast! She would be better in a public school. You can teach her about your Christian faith and the Bible at home. (It's your job anyway). The fact that a private school is a Christian school does not necessarily make it a good school. I would prefer to have an atheist surgeon who knows his stuff operate on me, than a Christian surgeon who is incompetent. The same applies to schools.

I'm just honestly stunned that the school is having a science fair.

Were I you? I'd have her do evolution. Should turn a few heads.

Electricity to fruit,though.

...And they want a bibiliac reference.

For gods sakes, pull her out before you turn her into a zombie. That's not an education,it's brainwashing.

According to Genesis 1:1, God created everything from "light" ("Let there be light") Use the fruit and electricity to release some of the light from which God originally made it.

Use a lemon, a zinc coated nail, a cooper penny, some wire, and a lightbulb.

Then reference "Let there be light"

You'll have to connect several lemons in series. Do a search on google with those terms, including "voltaic cell". You'll find something.

Do not eat the fruit from the tree of knowledge for you shall surely die.
