strawberry and chicken salad
1 pkg. (10 oz.) romaine salad greens or 8 cups torn
romaine
1 pkg. (6 oz.) LOUIS RICH Oven Roasted Chicken Breast
Cuts
1 can (15 oz.) mandarin orange segments, drained
2 cups sliced strawberries
1/2 medium red onion, sliced
1/2 cup PLANTERS Sliced Almonds
1/2 cup KRAFT Special Collection Creamy Poppyseed Dressing

Preparation:
Toss romaine in large bowl with chicken cuts, oranges,
strawberries and onion.
Sprinkle with almonds.
Drizzle with dressing.

Chicken Strawberry Spinach Salad with Ginger-Lime Dressing

Cook Time: 20 Minutes Ready In: 30 Minutes
Yields: 2 servings

"Chicken and strawberries are served over a bed of spinach, sprinkled with
almonds and served with a creamy lime dressing."
INGREDIENTS:
2 teaspoons corn oil
1 skinless, boneless chicken
breast half - cut into bite-size
pieces
1/2 teaspoon garlic powder
1 1/2 tablespoons mayonnaise
1/2 lime, juiced
1/2 teaspoon ground ginger 2 teaspoons milk
2 cups fresh spinach, stems
removed
4 fresh strawberries, sliced
1 1/2 tablespoons slivered
almonds
freshly ground black pepper to
taste

DIRECTIONS:
1. Heat oil in a skillet over medium heat. Place chicken in skillet,
season with garlic powder and cook 10 minutes on each side or until juices
run clear. Set aside.
2. In a bowl, mix mayonnaise, lime juice, ginger and milk.
3. Arrange spinach on serving dishes. Top with chicken and
strawberries, sprinkle with almonds and drizzle with dressing. Season with
pepper to serve.


fresh fruit tostadas
Tostada Shells (see recipe below)
1 can (17 oz.) apricot halves, drained
2 T honey or liquid sweetener
1 cup strawberry halves
1 cup sliced peaches or apricots
1 cup quartered fresh figs or plums

Prepare Tostada Shells. Place apricot halves and
honey (or liquid sweetener) in a food processor
workbowl fitted with steel blade or in a blender
container; cover and process until smooth.

Mix apricot mixture, strawberries, peaches and figs
(or plums). Sppon about 1/2 cup mixture into each
tostada shell.

Garnish with a sprinkle of powdered sugar and a fresh
mint leaf if desired.

TOSTADA SHELLS

6 flour tortillas (6 to 7 inches in diameter), warmed
Vegan margarine, softened
1/2 cup vegan chocolate chips or carob chips
1 tsp vegetable shortening

Heat oven to 400°. Spread one side of each tortilla
with vegan margarine. Press each tortilla, margarine
side down, in ungreased 10-ounce custard cup. Place
custard cups in jelly roll pan, 15 1/2 x 10 1/2 x 1
inch. Bake until light golden brown, about 10
minutes. Remove shells from custard cups. Heat
chocolate chips and shortening until melted; drizzle
over insides of tostada shells. If necessary,
refrigerate until chocolate is firm, 3 to 4 minutes.
Makes 6 servings.

This is one of my favorites:

Strawberry Bread
2 loaves 1¼ hours 10 min prep

2 cups sugar
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 teaspoons cinnamon
4 eggs (beaten)
2 cups frozen strawberries (Thawed)
1 1/4 cups cooking oil or melted butter or margarine
1 1/4 cups chopped walnuts or cashews or pecans

Preheat oven to 350 degrees F.
Mix all dry ingredients.
Add other ingredients and mix well.
Pour into 2 greased loaf pans.
Bake for 60-70 minutes.

Strawberry Cake

white cake mix
strawberry gelatin dessert (small - remove and reserve 2 tablespoons)
1 cup thawed strawberries (or 1 cup fresh sweetened)
4 eggs
1/3 cup water
2/3 cups oil

Preheat oven to 350°.
Mix all ingredients well. Bake in three greased and floured pans for 25 minutes (test for doneness with toothpick). Cool layers.

Icing:
3 cups powdered sugar
1 stick butter melted
¾ cups thawed (or fresh sweetened) strawberries
2 tablespoons gelatin dessert (left from layers)

Melt butter, add sugar, strawberries and gelatin dessert. Bring to a bubble boil, stirring constantly until consistency to spread. Remove from heat and spread between layers and over cake. Place whole strawberries on top of cake.



Strawberry or Pineapple Bread

2 – 10 oz pkg or 2 boxes frozen strawberries or
1 – 20 oz can crushed pineapple, drained
4 eggs, beaten
1 ¼ cup vegetable oil
2 cups sugar
3 cups flour
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 ½ cups chopped nuts (walnuts or macadamia)

Blend strawberries or pineapple with eggs, oil, and sugar. Sift flour, baking soda, salt, and cinnamon together and add to egg mixture. Stir in nuts.

Put into 2 or 3 buttered aluminum loaf pans depending on size of pans. Bake at 350F for 1 hour. Makes 2 regular size loafs or 4 small ones. If using small pans decrease the cooking time to 45 minutes.

My dad used to bring home large bags of produce and ask me to find a good recipe for it, too. That was fun. Here's something a little different -- unless you're Finnish, of course. It's a Finnish berry dessert called kiiseli (pronounced KEE-sell-ee) that has no dairy products in it but comes out about the same consistency as pudding. I love it. Eat it in a big bowl with cream or milk poured over it or just plain.

300 grams frozen berries (packages list both oz and g usually)
2 cups water
1/2 cup sugar
2 tbl cornstarch or potato starch

Stir water, cornstarch, and sugar together until smooth in a large saucepan. Add berries and stir well. Bring to boil over medium heat, stirring frequently. Boil about 3 minutes stirring constantly. Cool and serve.

use frozen strawberries and orange juice for a smoothie like drink... mix that in a blender of course... you can use them in ice cream as an add inn... or you can put them in some water with some sugar and let it reduce to create a strawberry syrup with real strawberry chunks in it that would be a great topping for any desert.

Fruit Cobbler

Preheat oven at 350°F
2-3 cups of any of these fruits: peaches, apricots, cherries, berries, apples, pineapple, plums, rhubarb, or a combination of any of these fruits (you can use canned or frozen fruit)
Heat the fruit in a pan at medium to medium high and bring it to a boil (you may need to add ¼ cup water to non-pulpy, hard fruits like apples or rhubarb)
Sweeten to taste with sugar
Mix together:
1 cup flour
¾ cup sugar
¾ cup milk (you can use plain non-dairy creamer like Mocha Mix)
1½ teaspoon baking powder
½ teaspoon salt
Mix batter ingredients together
Melt:
¼ cup butter or margarine (I recommend butter and you can add less than ¼ cup)
in a pan that is 8x8x2 - 9x9x2 inches by placing butter/margarine in pan then placing it into the oven. Pour the batter into the pan over the butter/margarine. Pour the hot fruit over the top of the batter. You can sprinkle the unbaked cobbler lightly with spices. Bake for ½ hour or 45 minutes for a more golden crust. Serve with cream, ice-cream, or plain.

put the frozen strawberries, a cup of yogurt, and your favorite juice in a blender, and voila! A wonderful smoothie, that is not as icy, and thicker than if you added ice and thawed fruit.

Frozen strawberries are best for dishes that require cooking or pureeing. Like pies, cheesecakes, ice cream, beverages. They don't taste good by themselves, it's a weird texture. So no using as toppings.

Smoothies are great.
I use frozen strawberries to make sauce for ice cream pancakes, waffles and best of all cheese blintzes with strawberry sauce.also known as crepes.
