I don't want to waste it, but I don't know what to do with it. What kind of creations can I make?

Give me recipes. I don't know how to make chicken salad or any of that kind of stuff.

Make a southwestern style chicken salad sandwich. Chop up a small fresh jalapeno, a small onion, 1/2 stalk celery, fresh cilantro. Debone and shred the leftover chicken and place in bowl with other ingredients. Add mayonaise, salt, pepper and a small amount of brown mustard to taste. Squeeze a little lime juice into the mix, if you like. Mix all these ingredients together and let rest in refrigerator for 30 minutes or more to let the flavors blend. Serve this on a toasted roll with thinly sliced red onion, sliced tomato and green leaf lettuce. This makes an awesome sandwich and it's even better when using smoked chicken. Hope you enjoy!

Make some BBQ chicken wraps. Take the chicken off of the bone, cut it into cubes. Put it into a tortilla wrap with some monteray Jack or other spicy cheese, and some extra BBQ sauce if you have it. Add some lettuce and tomatos, or whatever you like. Eat hot or cold. To heat it, just stick it in the microwave!

The most simple thing to do with it would to cut it up and place the pieces on a salad to make a chicken salad. A little more work and you can make a chicken sandwich by placing it on a bun and adding cheese, onion, tomato, etc, whatever you like. One thing that I like to do is to buy soft taco shells and make quesadias!

In a skillet over medioum heat with a table spoon of oil fry one onion, one green pepper (or any tiype of pepper, if you like it hot add jalepeno, banana...) a finely diced cloze of garlic and cook until the onions start to caramelize (turn golden brown). Add your left over chicken, cut into strips and turn the heat down to simmer and let the chicken warm through. remove from heat.

In a second skillet (or a gridle) place a small amount of oil on the bottom and heat over medium heat. Take a soft taco shell and place a couple of slices of your favorite cheese on and top it with some of the onion, pepper, chicken mixture spreading it over the cheese to resemble a pizza. Sometimes I will add some already cooked bacon on top of that and then some more cheese. Cap it with a second soft taco shell. Carefully place it into the skillet and fry over medium heat, pressing lightly on it every so often to let the cheese "glue" everything together, for about 5 minutes or until the taco shell is browned. Carefull flip over and repeat. As the shell cools it will crisp up, giving you that quesadia crispiness. Continue until you run out of ingredients.

Annother way to use it up is to take a fork and shred the meat, add more BBQ sauce and slightly thin it out with water or tomatoe sauce. You will then have the makings for a pulled chicken sandwich.

Another favorite of mine is to take a piece of pita bread and use it like a pizza crust. add a little more BBQ sauce to the pita for your pizza sauce, top with some chunked or cut or shredded chicken and then veggies (cooked or raw) and cheese or whatever you may like on pizza and then microwave it to heat through and to melt the cheese. Usually only takes 30 seconds or less. May take more if your ingredients are fresh out of the fridge and you haven't reheated them first. This is a family favorite because they are individual size so everyone can make it the way they like it!

Pulled Chicken BBQ sandwiches.

Tear the chicken apart with a couple of forks, pile shredded chicken onto half a sandwich roll, top with some cole slaw and a little more BBQ sauce if you like, top with second half of sandwich roll. Eat

You can make this and add the BBQ chicken on top. mmmmm good.
Cheese Veggie Pizza
A low fat pizza with fresh vegetables and a thin crust.Ingredients:
• 1 tablespoon canola oil
• ? teaspoon red pepper flakes
• 1 large white onion, chopped
• 1 large green pepper, seeded,
• de-veined and chopped
• 1 medium yellow squash, chopped
• 1 cup broccoli florets
• 10 ounce Thin Pizza Crust
• 4 tablespoons Molly McButter Natural Cheese Flavor Sprinkles, divided
• 1 cup low-fat marinara sauce
Method:
Preheat oven to 375 degrees F. In a large non-stick stick skillet, heat the canola oil and red pepper flakes. Add the onion, pepper and squash and saute until they begin to soften, about 5 minutes. Toss in the broccoli florets and cook for another 2 minutes. Remove from heat. Place the pizza crust on a non-stick baking sheet and sprinkle evenly with 2 tablespoons Molly McButter Natural Cheese Flavor. Spoon the marinara sauce over the cheesed dough. Pour on the sauteed vegetables arranging them evenly on top of the sauce. Sprinkle 2 more tablespoons Molly McButter Natural Cheese Flavor over the vegetable mixture. Bake for 15 - 18 minutes until the edges of the crust are golden brown. Remove from oven. Serve immediately. Cooks Note: For even more authentic flavor, buy uncooked pizza dough from your local pizzeria and use in place of the thin pizza crust.

Make a BBQ chicken pizza. Just spread some BBQ sauce on a boboli pizza shell (or make your own crust), add the chopped chicken, cheese (monterey jack is nice), and whatever veggies suit your taste.

I just love these two recipes that can be made with leftover chicken. Try one of them out!

INGREDIENTS
1 (48 fluid ounce) can chicken broth
3 cups water
2 frozen skinless, boneless chicken breast halves - diced
1 small onion, diced
1 cup thinly sliced carrots
1 teaspoon lemon pepper
1 teaspoon dried oregano
1 dash garlic salt
2 cups fresh broccoli florets
1 (9 ounce) package frozen cheese tortellini
1/4 cup grated Parmesan cheese
DIRECTIONS
Bring the broth and water to a boil in a large pot, and mix in chicken, onion, and carrots. Season with lemon pepper, oregano, and garlic salt. Reduce heat to low, and simmer 25 minutes, or until chicken juices run clear.
Stir the broccoli into the pot, and cook 10 minutes. Stir in the tortellini, and continue cooking 10 minutes, or until tortellini is al dente. Mix in the Paremsan cheese just before serving.

OR

INGREDIENTS
4 skinless, boneless chicken breast halves - cut into bite size pieces
salt and pepper to taste
2 cups cooked white rice
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
3 slices soft white bread, cubed
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
To Cook Chicken: Season chicken with salt and pepper to taste, place in a microwave-safe dish, cover and cook in microwave for 5 to 6 minutes. Turn and cook another 2 to 3 minutes or until cooked through and no longer pink inside. Let cool.
In a 9x13 inch baking dish, combine chicken, rice and soup and mix well. Top with cheese, then with bread cubes.
Bake at 350 degrees F (175 degrees C) for 20 minutes, or until cheese is melted and bubbly and bread is crunchy.

Its great to pull it (take 2 forks and shred it) if it not already in smaller pieces and put on top of a baked potato with a little sour cream or cheese. Its also got that way on tortilla chip and dressed like nachos.

make a sub sandwich out of it. Just debone it, shred it, and stick it in a bun with some cheese and veggies and Voala!! You've got tomorrow's lunch ready.

shred it up and have bbq chicken sandwiches on buns, or you could mix it with a box of velveeta shells and cheese and bake it with a cornbread mix on top.
