Because the process that creates oil and coal from decomposing plants takes million of years to work its magic. We are extracting coal and oil much faster than it can ever replenish itself.

because things like petroleum, part of oil, are fossil fuels, created from fossils, and take millions of years to form. so if we use all the fuel, then its virtual non-renewable because it takes so incredibly long.

Because the oil we use to make gas/diesel/etc come from fossilized remains of plants and animals that are (supposedly) millions of years old.

Because it takes so long to create these remains, and we are using them so fast, we are going to run out "soon" although no one really knows when; we just know we're depleting our resources.
