Roma tomatoes can be used anywhere regular tomatoes are used, unless a recipe states to use a specific type of tomato besides Roma. I like them for putting on sandwiches, because their shape makes them easier to slice accurately.

Cooking, or sauce tomatoes but when regular tomatoes don't look too great, or are very soft when out of season, I use roma in my salads. They're just fine

An oval shaped tomato that is quite hearty.

I use them most for making salsa.....but they can be used for anything....just like other tomatoes.

They are pretty much interchangeable.
