There are lots of little pockets of air that insulate the ice that isn't at the surface.

It's just ice, as far as I know.

Back when I had my Snoopy shave ice machine, I used regular ice.

Plus, you're putting on sugary syrup, or condensed milk or whatever, which keeps it from melting.

A cold room? I had an ice shaver, it just shaves plain ice.
