I am learning it in French class, and it seems like nobody ever uses this verb form in normal english conversation...how frequently is it used in France? Examples?

The subjunctive mood *is* used quite a lot in speaking. In English, we don't use it nearly as frequently as in French.

Some examples in French/English:

What do you want me to say to you? Qu'est-ce que vous voulez que je vous dise? Dise (from dire) is subjunctive. Subjunctive is also used with certain words (although, etc.)

I want you to eat. Je veux que tu manges.

etc. Subjunctive is also used a lot in writing.
