hey all, I don't own a deep fryer but I want to deep fry some food in a pot I was thinking potato wedges like the other question. I need to know some basics. how big of a pot should I use, what kind of oil is best? can I keep the oil afterwards and heat it up again? should I go out and buy a thermometer from a store or is there certain tricks I could use to figure out when its hot enough?

Mojos (Delicious Deep Fried Potatoes)
This is one of the first Copycat recipes I've tried. It's a big hit everytime I make it. They taste really really good!

4-6 servings 15 min 10 min prep
1/2 cup flour
1 teaspoon garlic salt
3/4 teaspoon pepper
1/4 teaspoon celery salt
1/4 teaspoon salt
4 medium potatoes, unpeeled but scrubbed
1 egg, beaten
vegetable oil (for frying)
ranch dressing or sour cream, optional

Mix flour and spices in shallow dish.
Cut potatoes into 1/2-inch thick wedges.
Dip potato slices into the beaten egg, then into flour mixture.
Deep fry in hot oil (about 375º) until golden brown, about 5 to 7 minutes.
Serve with dressing or sour cream.

Use a huge pot. Any oil will work. Yes you can use the oil afterwards and use it again, my grandma would have an empty coffee can and put the oil in it and use it the next day. Yes I would use a thermometer from the store.

You don't need a huge pot. You can use your big one, but don't fill it up all the way. For deep frying you will probably need a whole bottle of oil--not virgin. Keep the oil afterwards and reuse for deep frying only. Stick the end of a wooden spoon in the oil if it bubbles around the spoon then its hot enough. For just a few potato wedges, you probably could use a frying pan filled close to the top will oil. No thermometer

Quick post...

Different oils have different smoking levels...some are better suited to frying that others...Canola oil (good)...Olive oil (bad).

Buy a thermometer...you need to have the oil at the right temp. If it is too cool, your food will absorb oil and it will be greasy. If it is at the right temp, than it will be nicely cooked.

Cast iron is always good for frying....it is thick and heavy, and it will retain the heat nicely..
