I'm not a scientist, but if I had to guess I would say that it breaks down the oil with detergent, then traps the tiny particle of oil inside a bubble so it can wash away instead of regrouping with other oil particles..

It emulsifies it of breaks it down chemically which is why you will get that film ring around your sink when you drain the water. The chemical composition is broken down but some of the molecules will still float and thus cause the ring.
