Boil it in salt water for about 5 minutes - then strain the water and dump the asparagus into a bowl of ice cold water (water with ice blocks).
From there saute them in butter and garlic for about 5 minutes, salt and pepper and serve as a side dish.
I like to serve them with over-easy eggs, then you dip the asparagus into the yolk of the egg, which serves as a sauce.

Asparagus
Preparation time: 10 minutes.
Selland's market-cafe in Sacramento is an uncommonly good café and often a source of inspiration for foods to prepare. Recently I had some of their asparagus and loved the texture - slightly crunchy (definitely not mushy!) - and the hint of lemon flavor along with the olive oil and Parmesan. Upon inquiry I was told that the asparagus had indeed been parboiled for 2 minutes and then tossed with Parmesan, olive oil, and some lemon zest. So easy!
1 bunch of medium sized asparagus, about 1 lb
2 Tbsp of the most exquisite extra virgin olive oil
2 Tbsp freshly grated Parmesan cheese
1 teaspoon lemon zest - freshly grated lemon rind
Salt and freshly ground black pepper
1 Prepare the asparagus by rinsing them thoroughly, break off any tough, white bottoms and discard. Cut into 1 to 2 inch sections, slicing the asparagus at a slight diagonal.
2 Fill a medium sized saucepan half way with water, bring to a boil. Add the asparagus and reduce heat slightly to a simmer. Parboil the asparagus for exactly 2 minutes. Drain the hot water. While the asparagus are still hot, toss them in a bowl with the olive oil, Parmesan, and lemon rind. Salt and pepper to taste. Serve warm or room temperature.
Note that when you are working with so few ingredients, it's important to make sure they are of the highest quality.
Swiss Styled Asparagus
If you like asparagus, you will love this. Fresh is always best as far as asparagus goes. This could be made with canned asparagus, just substitute your juice from the can in place of the chicken broth. 1 can of asparagus would be about right I think
4 servings 30 min 15 min prep
1-2 lb fresh asparagus
4 tablespoons butter
1 tablespoon flour
1 cup chicken broth or vegetable broth
1 cup milk
1 cup grated swiss cheese
1/2 cup breadcrumbs
Preheat oven to 400 degrees.
Melt butter in a sauce pan.
Add flour and mix until incorporated.
Add broth and simmer until thickened, remember to poor in slowly.
Add your cheese and put aside until you need it.
Trim or peel asparagus and place into a oven proof dish
Pour your sauce over the asparagus and top with the breadcrumbs.
Place dish in oven for about 15 minutes and serve nice and hot.
Enjoy!

I absolutely love to cook asparagus. The way that I like to do it is to take some butter and melt it down then put your asparagus in the pan and season with salt and pepper lightly. Then when the butter is gone, pour in some red wine vinegar. Reduce for about a minute or so, no longer than that. and it comes out perfect every time!

First of all, trim the tough ends off - hold each end & bend & it will snap where it needs to. Rinse, drain & place in the center of a good size piece of foil. Drizzle w/ a little italian dressing, then salt & pepper. Add a couple of pats of butter & seal into pouch. Grill over medium coals right along with a nice juicy Rib-eye. Gonna do that this weekend!

Snap the tough ends off. Steam for a few minutes until cooked, but still a little crunchy. I like to dip asparagus (and artichokes, too) in a mixture of mayonnaise, pressed garlic, and lemon juice. Delicious!

wow... asparagus and brussel sprouts are my favorite. but many people way over cook asparagus... its simple really... if you like butter or some other sauce prepare that first. but here is the simple fast way to make them... bring a sauce pan of water to a boil. when it begins to boil ad some salt. then put the asparagus in there... BUT only until it changes from a light green color to dark green, 1 one to two minutes TOPS!!! this will give you great crispy and hot asparagus that is not mushy. eat right away. asparagus will continue to cook while they are together on the serving plate so remember that. you dont want mushy asparagus!

I would recomend steaming it, or lightly sauteeing in a tiny bit of olive oil add a pinch of salt to taste of drizzle with hot holandaise sauce

I cook mine in a steamer pan. Little bit of water in the bottom! Just steam them long enough to get them hot. Not to long they'll go mushy on ya. Add salt for flavor if you'd like.

Trim the ends (they snap at a natural point where they should be trimmed), toss with olive oil, s&p, and garlic, bake at 400F for about 12 minutes or until tender as you like them (12 min for thinner ones).
