Chicken Casserole... Check out the recipe...
Cheesey Chicken Casserole
Prep Time: 15 minutes
Bake Time: 20 minutes
Ingredients:
Vegetable cooking spray
4 skinless, boneless chicken breast halves, cut up
1 cup sliced fresh mushrooms
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Celery Soup OR Cream of Broccoli Soup
1 can (about 15 oz.) peas, drained
2 cups cooked instant rice
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup
2 cups shredded mozzarella cheese
Directions:
PREHEAT oven to 350°F.
SPRAY skillet with vegetable cooking spray and heat 1 min. Add chicken and cook until browned and done.
SPRAY baking dish with cooking spray. Place chicken in baking dish. Top with mushrooms. Spoon celery soup over mushrooms. Top with peas and rice. Spoon mushroom soup over rice and top with cheese.
BAKE 20 min. or until hot.

Porcupine Balls
1 egg
½ cup water
1 envelope lipton onion soup mix
1 ½ lbs lean ground beef
½ - ¾ cup uncooked minute rice
1 – 46 oz bottle of Campbell Tomato Juice
1 tsp sugar
Beat egg slightly with water and 2 tbs soup mix. Mix lightly with beef and ¼ cup of rice. Shape into large meatballs (1 ½ to 2 inches). Roll in remaining rice, pressing it lightly into the meatball. Use more rice if needed.
Heat tomato juice to boiling. Stir in remaining onion soup mix and sugar. Place meatballs in sauce and cover. Simmer, stirring several times for 50 minutes.
Serving suggestions: Great with a vegetable or salad and rolls.
Sweet & Sour Meatballs
1 lb ground beef
1 tsp garlic salt
dash pepper
1 sml can pineapple (optional)
1 can or jar sweet & sour sauce (I like the Contadena brand, but any will work)
Combine first 3 ingredients. Make into meatballs, 1 to 1 ½ inch wide. Place in shallow casserole dish and bake in 350 F oven, for 20 minutes. Drain of grease. Bake for 10 more minutes. Drain again. Pour sauce over meatballs and bake for 15 minutes. Serve over rice. Makes 2-4 servings.

Meat Dishes and Recipes
Fantastic Stir Fry Recipe
If not Vegetarian add about ½ a pound of flank steak sliced into thin morsels that you marinate for a while in soy sauce or 1-2 chicken breasts also cut in cubes and let marinate in soy sauce
1 teaspoon of sesame oil or sunflower oil
1 yellow onion (chopped in large pieces)
3 cloves of garlic (minced)
I head of Broccoli
Snow Peas
2 Carrots cut in small pieces
1 package of bean sprouts
Mushrooms (White, cremini, oyster, shitake whatever is your fancy)
1 teaspoon of black bean sauce
2-3 tablespoon of Soya sauce
You can add any other vegetable to your liking (Peppers, eggplant…)
cooked over either a bed of rice or Chinese noodles
Add the oil to your wok or pan, raise the burner to high heat and add the garlic onions carrots and broccoli.
With a wooden spatula continuously stir so as to not let the vegetables burn.
Add the 1 teaspoon of black bean sauce
Lower the heat to medium
If you are making a beef or chicken stir fry, add the meat with the sauce it has been marinating in.
If you are using mushrooms, snowpeas or peppers add them at this point. It takes longer for Broccoli and carrots to cook through than mushrooms and peppers and you don’t want any of your veggies to be soggy
Once you see all is cooking well add your soy sauce and bean sprouts- it takes very little time to cook those suckers.
Once you see that they have wilted, your stirfry is cooked
Serve it either on top of a bed of rice or if you are making noodles (rice or egg noodles) have them pre cooked ahead of time and add them to your wok and toss everything together.
Marinated Chicken Breast
Sick and tired of plain chicken breasts - too boring and bland- Here are a few marinade recipes that are real easy and will spice them up.
Honey Balsamic Recipe
2 tablespoons of honey
1 tablespoon of Balsamic vinegar
1 teaspoon of oil
juice of half a lemon
1 clove of garlic (minced)
½ teaspoon salt
In a bowl mix all these ingredients together and add your chicken- Marinate the full breasts or cubes (if you decide to cut them) for at least an hour- preferably longer-
Cook them in a skillet with the remainder of the marinade- it will create a thick tasty sauce to accompany your chicken
White wine/lemon marinade recipe
Juice of half a lemon
½ cup of white wine (preferably dry)
1 teaspoon of Dijon mustard
1 clove of garlic (minced)
1 teaspoon of oil
oregano and thyme
salt and pepper
Combine all of your ingredients together and add your chicken (full breast or diced). Let marinate for at least an hour. Heat your skillet and cook chicken at high heat until the outside is brown and lower the heat so the insides cook. Add the remaining marinade so as to create a sauce for your dish.
If you want to thicken your sauce- you can add some cream to your sauce at the last minute. Whisk it in (about 3-4 tablespoons) and bring to a boil and then simmer for a couple of minutes. Gives a great taste.
You can serve this with rice or any veggie.
Lemon Ginger Chicken Recipe
2 chicken breasts cut in cubes or thin strips
Juice of a lemon ½ cup
1 ½ teaspoon of Ginger minced
2 cloves of garlic minced
1 teaspoon of oil
1 tablespoon of brown sugar ( or as much as you want to get the desired sweetness- usually between ½ to 1 tablespoon is right)
¾-1 teaspoon of cornstarch
Cook the chicken in a skillet with a little oil. When chicken is almost cooked remove it from the skillet. Add the ginger and garlic and sauté until lightly brown. Add the lemon juice and the brown sugar and mix well. Let boil.
In a little water dilute the cornstarch so that it does not clump. Add this mixture to the skillet. Add the chicken and stir until the sauce thickens to the desired consistency. If you see it is still too liquidy add some more cornstarch.
Serve over a bed of rice
Serves 2-3 people
You can actually prepare the same recipe but substitute orange juice for the lemon juice. If you decide to do this do not add the brown sugar because the orange juice is already naturally sweetened.
Greek Roasted Chicken Recipe
This dish is not only fabulous to eat, the smell is overwhelming and really creates much salivation to your awaiting tastebuds. This recipe is so easy and such a treat. The only patience you need is 1 ½ to cook. Preparation time is minimal and you usually make enough to last 3 meals. The beauty of this dish is the more you reheat it, the more succulent it is. Here goes
3 chicken legs (Leave the skin on)
3 chicken thighs (Leave the skin on)
8-10 small white potatoes
2 large red tomatoes
3-4 cloves of garlic
1 lemon
2 tablespoons of olive oil or sunflower oil
thyme
salt and pepper
Peel your potatoes and cut in small chunks.
Dice your tomatoes and mince your garlic.
Mix all of these ingredients together and squeeze half a lemon on them.
Add a tablespoon of oil, salt and pepper and thyme.
In another bowl you are going to marinate your chicken with the other half of lemon (you can only use ¼ of a lemon if you wish) the other tablespoon of oil, salt and pepper and thyme.
You want to have both your vegetables and chicken marinating for an hour’s time so as to absorb all the lemon juice.
When ready to put in the oven, place your vegetables and chicken in preferably a baking pan (ceramic) or else aluminum should do.
Place in the oven at 350 for 1 ½ . Every forty minutes take the dish out and mix it all up.
You will know when it is ready by tasting the potatoes.
The reason for leaving the skin on whilst cooking is to trap the moisture in the chicken so that it does not dry out. Otherwise you will have very dry chicken which is quite unappetizing.

Momma's Man Eater Meat Meal
Beef brisket braised in a mixture of cola, onion soup mix and chili sauce--tender and so full of flavor.Ingredients:
• 1 3 lb brisket
• 1 12 oz can of Coca Cola (not Pepsi)
• 1 envelope Lipton onion soup mix
• 1 10 oz bottle Heinz chili sauce
• Rice or no yolk noodles
Method:
Remove fat from brisket. Place brisket into a large Reynolds cooking bag. Mix all ingredients in a bowl and pour over brisket in bag. Seal and poke a few holes with fork on top of bag. Cook 3-3 1/2 hours in oven at 350 degrees F. Serve over rice or noodles.
Notes:
This "easy" dish will make any man fall down at your feet. This is the first meal we introduced to all of our mates in our family and it is a favorite with the men. This recipe doubles well too, for a bigger crowd.

Veggie and BBQ Chicken Pizza
Assorted cooked vegetables (squash, onion, baby portabellas) are sprinkled over BBQ sauce on pizza crust and topped with chicken & cheeses.Ingredients:
• 1 Tbsp butter
• 1 Tbsp olive oil
• 1 yellow summer squash diced
• 1 small zucchini diced
• 1 small sweet onion diced
• 4-5 baby bella mushrooms diced
• 2 pre-made pizza crusts (your favorite kind)
• 1 jar of your favorite BBQ sauce (I like to use a sweet kind)
• 4-6 cups grated mozzarella cheese
• 2-3 cups grated cheddar cheese
• 1 bunch fresh cilantro chopped
• 2-3 grilled boneless chicken breasts, chopped
Method:
In a pan over medium heat melt 1 tbsp. butter and 1 Tbsp olive oil. When melted add chopped onions. Saute until translucent in color. Then add mushrooms, zucchini, and yellow summer squash. Saute a few minutes. (You want veggies still firm.) Place pre-made pizza crusts on pans (if using pizza dough, pre-bake about 8 minutes at 350 degrees.) Spread 1/2 to 1 cup of BBQ sauce over crusts. Sprinkle with 1 to 2 cups mozzarella cheese and 1 cup of cheddar cheese. Sprinkle 1/2 of the grilled chicken over pizza. Then sprinkle half of the veggies over each pizza. Sprinkle 1-2 cups mozzarella cheese and 1/2 cup cheddar on top. Sprinkle 1/2 chopped cilantro on top of pizza. Bake at 375 degrees about 12-15 minutes, or until cheese is nicely melted and starts to brown on edges of pizza.
Notes:
There are enough ingredients to make about 2 medium-sized pizzas. Use the amount of sauce and cheese that your personal taste buds like!

No precooking is required for the lasagna noddles in this lasagna. The noodles become tender as the lasagna bakes.

1/2 pound Italian sausage, casing removed
2 jars (26 ounces each) spaghetti sauce, divided
2 eggs
2 containers (15 ounces each) ricotta cheese
1 package (8 ounces) shredded mozzarella cheese, divided
1 tablespoon McCormick® Garlic & Italian Herb
1 teaspoon McCormick® Parsley Flakes
1/2 teaspoon salt
1/4 teaspoon McCormick® Ground Black Pepper
9 lasagna noodles, uncooked
1/4 cup grated Parmesan cheese
1. Preheat oven to 350°F. Brown ground beef and sausage in large skillet on medium heat; stirring occasionally. Drain fat. Stir 4 cups spaghetti sauce into meat mixture. Reserve remaining spaghetti sauce for serving.
2. Beat eggs in large bowl. Add ricotta cheese, 1 1/2 cups mozzarella cheese, Garlic Blend, parsley, salt and pepper; mix well.
3. Spread about 1 cup of the meat sauce onto the bottom of 13x9-inch baking dish; top with 3 noodles. Spread half of the cheese mixture over the noodles. Repeat meat sauce, noodles and cheese layer once. Top with remaining noodles and meat sauce, making sure to cover noodles with sauce. Sprinkle with remaining mozzarella cheese and Parmesan cheese. Cover with foil.
4. Bake 45 minutes. Remove foil. Bake additional 15 minutes or until noodles are tender. Let stand 15 minutes before cutting. Serve with reserved spaghetti sauce.

This super simple four ingredient recipe is very delicious, and perfect for picnics or family dinners.
INGREDIENTS:
1/3 cup butter, melted
1 cup crushed saltine crackers
2 Tbsp. dry onion soup mix
8 chicken drumsticks
PREPARATION:
Preheat oven to 350 degrees. Stir together crackers and onion soup mix. Dip chicken legs into melted butter then coat with cracker mixture. Place remaining butter in 13x9" baking pan, then top with coated chicken legs.
Sprinkle with any remaining crumb mixture.
Bake for 45-55 minutes or until chicken is tender and thoroughly cooked. You can serve these with sour cream and salsa for dipping if desired. 8 servings
