I am guessing that Bhurta means eggplant-what about baigan?

Its a dish that can be best described as.... Mashed Eggplants.

First the eggplant is roasted without any spices over a flame.

Then its mashed and some spices are added to taste.

Baingan means eggplant, not Bhurta.
Bhurta means...I don't know, probably something like "mashup" or something.

Baigan means eggplant and bhueta is some kind of food dish with tomatoes and spices. When you mix the both together, you get, baigan bhurta.
You should taste it someday..
